Ingredients
For the biryani:
- 75 ml olive oil
- 1 small onion, peeled and sliced
- 1 bay leaf
- 1 pinch of cinnamon
- 8 cardamom pods
- 6 cloves
- 1 garlic clove, crushed
- 500 g lean chicken, diced
- 1 teaspoon of:
- ginger
- cardamom
- turmeric
- dill
- coriander
- garlic
- salt
- chili powder (all ground)
- 150 ml yogurt
- 400 ml water (or vegetable/chicken broth)
For the rice:
- 500 g rice (basmati is ideal)
- 600 ml water
- 2 teaspoons salt
- 1 bay leaf
- 6 cardamom pods
- 1 pinch of cinnamon
- 1 teaspoon black cumin
For garnish:
- 1 onion, sliced
- fresh coriander (or parsley)
- 1 pinch of saffron or turmeric
- juice of 1/2 lemon
- 1 chili pepper, sliced
- 1/2 bell pepper (red)
Step by step
1. Preparing the meat
In a deep pan, heat the olive oil over medium heat. Add the sliced onion and crushed garlic. Sauté until they become translucent and soft, about 5-7 minutes.
2. Adding the spices
Add the bay leaf, cinnamon, cardamom pods, and cloves. Sauté the spices for 1 minute until their aroma becomes intense. These spices will give your biryani an incredible depth of flavor!
3. Preparing the sauce
Add the ground spices, yogurt, and diced chicken. Mix well so that all the meat is coated in the delicious sauce. Add the water or broth and let it simmer on low heat for about 50 minutes until the sauce thickens and the meat is tender.
4. Cooking the rice
Meanwhile, wash the rice in several waters until the water runs clear. In a pot, add the washed rice, the 5 spices (bay leaf, cardamom, cinnamon, cumin) and salt, then cover with water about 3 fingers above the rice. Let it simmer on low heat, covered, until the rice is cooked but not too soft, about 15-20 minutes.
5. Assembling the biryani
In a heatproof dish greased with a little butter, place half of the cooked rice. Add the meat along with half of the sauce. Continue with the rest of the rice and sauce. On top, add the sliced chili, parsley or fresh coriander, fried onion, saffron or turmeric soaked in a little water, and the sliced bell pepper.
6. Baking
Pour the lemon juice over everything and cover the dish with aluminum foil to retain moisture. Bake in a preheated oven at 180°C for 30-40 minutes. The aroma that will fill your kitchen is simply irresistible!

Once the biryani is ready, let it rest for a few minutes before serving. You can pair it with mint chutney or yogurt for a refreshing contrast. A fresh salad can also perfectly complement this dish.
