To prepare a delicious stuffed mushroom recipe, we start by carefully cleaning the mushrooms, ensuring that we remove any impurities. Once the mushrooms are clean, we remove the stems, which will be used later in the filling. It is important to choose fresh mushrooms, preferably champignon or porcini, which have a firm texture and a pleasant taste.

In a large skillet, we add a little olive oil or vegetable oil and heat it over medium heat. Once the oil is hot, we add finely chopped onion and let it sauté. The onion will develop a sweet and pleasant aroma as it softens. Then, we add the finely chopped mushroom stems, mixing well to combine the flavors. We continue with the carrot, celery, and parsley, all finely grated using a lemon grater, which will add a fresh and vibrant note to the mixture.

We season the composition with freshly ground pepper, and for an extra flavor boost, we add a tablespoon of vegetable concentrate. We mix the ingredients well and let them simmer on low heat until all the vegetables are softened and the flavors are combined. Once we finish cooking the vegetables, we turn off the heat and add a heaping tablespoon of grated cheese and a handful of freshly chopped parsley, which will bring an extra freshness and color.

Now, each little mushroom will be filled with this delicious mixture. It is important to fill the mushrooms generously but without overloading them to avoid the filling leaking during baking. We place the stuffed mushrooms in a tray, adding a little water to the bottom of the tray to prevent sticking and to keep moisture during baking.

We preheat the oven to 180 degrees Celsius and place the tray with mushrooms inside. We let them bake for 20 minutes, at which point the mushrooms will become soft and aromatic. Five minutes before removing them, we sprinkle a little grated cheese over each mushroom to achieve a golden and savory crust.
