Ingredients: -1 kg rice; -800 g minced meat; -500 g peas; -100 g parmesan (or grated cheese, the original recipe uses goat cheese); -2-3 mozzarella (or melting cheese); -500 g breadcrumbs; -4 eggs; -1 small can of tomato concentrate; -1 glass of white wine; -1 onion; -2-3 cloves of garlic; -basil;
To prepare a delicious and hearty meal, we start by preparing the necessary ingredients. The first step is to finely chop the onion and garlic, which will form the aromatic base of the recipe. Place a large pan over medium heat and add a little olive oil or vegetable oil. When the oil is hot, add the chopped onion and garlic. Sauté them for a few minutes, stirring constantly, until the onion becomes translucent and starts to turn a light golden color.
Once the onion and garlic are softened, add the minced meat. It is important to stir constantly to avoid forming large clumps of meat. As you continue to stir, you will notice how the meat changes color and begins to release its juices. When the water released by the meat has significantly reduced, add the white wine, which will add a special flavor to the dish. Let the wine boil for a few minutes until the alcohol evaporates, leaving behind a refined taste.
After the wine has evaporated, add the tomato paste diluted in warm water, making sure to cover the meat evenly. Season with salt, pepper, and fresh basil, then reduce the heat and let it simmer for about 30 minutes. It is essential to check occasionally, stirring to prevent sticking to the bottom of the pan. After this interval, add the frozen or fresh peas and boil for another 20 minutes over medium heat, until the peas are tender and the mixture becomes thick. If there is excess sauce, strain it and set it aside for later use.
Meanwhile, prepare the rice. Boil it according to the instructions on the package, making sure to cook it "al dente." After boiling, rinse the rice under cold water and let it cool completely. Once the rice has cooled, add two whole eggs, salt (it can be vegetable or regular salt), pepper, the strained excess sauce or a tablespoon of broth, and grated cheese or Parmesan, if you have it. Mix all the ingredients well to obtain a homogeneous mixture.
From the rice mixture, form balls, and in the center of each ball, add a piece of mozzarella and a little of the meat mixture. Shape the balls so that the filling is well sealed. Then, dip each ball in beaten egg and then in breadcrumbs, making sure they are evenly coated. In a deep pan, heat a generous amount of oil and fry the balls over medium heat until they turn golden and crispy. Remove them onto a paper towel to absorb the excess oil and serve them hot, accompanied by the remaining sauce or a fresh salad. This recipe will surely bring a smile to the faces of your loved ones!
