To prepare a delicious potato and mozzarella bread recipe, we will carefully follow the steps, ensuring that each ingredient is well integrated. We start by mixing 30g of flour with fresh yeast and lukewarm water. This mixture will become the base of our starter, so it is essential to homogenize it well. We let the starter ferment at room temperature for about 45 minutes, until it doubles in volume and becomes frothy.
While the starter is rising, we take care of the potato. We boil the potato with the skin, being careful not to overcook it so that it doesn't crumble. Once cooked, we peel it carefully and let it cool slightly before mashing it. The fine texture of the potato puree will add a special flavor to our bread.
Once the starter is ready and the potato cooled, we mix the remaining flour with the potato puree, soft butter, eggs, and yeast starter. We continue by adding diced mozzarella and finely chopped ham. It is important to ensure that all ingredients are well integrated so that each bite is rich in flavors and textures.
We must be prepared that the dough will be sticky and difficult to handle. Therefore, I recommend using a silicone or wooden spatula to mix and manipulate the dough. We place the dough in a cake pan, preferably one with removable edges, in which we have placed a baking sheet. We cover the dough with another baking sheet greased with olive oil to prevent it from drying out. We let it rise for about an hour in a warm place where it can have a constant temperature.
After the dough has doubled in volume, we carefully remove the baking sheet from the top and place the pan in the preheated oven at 180°C. We bake the bread for 30-40 minutes until it becomes golden and has a crispy crust. After baking, we let the bread cool slightly in the pan, then transfer it to a wooden board.
This potato and mozzarella bread is perfect both warm and cold. We can serve it plain or alongside a fresh salad. It keeps well for a few days if covered with a towel on a wooden board. Enjoy every bite and savor the exquisite taste of this recipe! Enjoy your meal!
