Jam Cake – a quick and delicious dessert

Do you dream of a simple dessert that impresses? I invite you to discover the jam cake recipe, a perfect choice for any occasion. With a fluffy texture and a flavor enriched by the sweetness of the jam, this cake quickly becomes your favorite. Moreover, it is a versatile recipe that can be adapted based on the ingredients available in your pantry.

Preparation time: 20 minutes
Baking time: 30-35 minutes
Total time: 55-60 minutes
Number of servings: 8

Ingredients:

- 4 large eggs
- 200 g sugar
- 200 ml sunflower oil (or olive oil for a more intense flavor)
- 200 g yogurt (or sour cream)
- 400 g flour
- 1 packet baking powder (about 10 g)
- A pinch of salt
- 200 g jam (apricot, berry, or any other preferred flavor)
- Vanilla essence (optional, for an extra flavor)

Instructions:

1. Start by preparing the ingredients. Make sure the eggs are at room temperature to achieve a lighter foam. In a large bowl or food processor, add the eggs and sugar.

2. Run the processor at maximum speed for 5-7 minutes, or until the mixture becomes frothy, white, and triples in volume. This step is essential for achieving a fluffy cake, so don't skip it!

3. Add the oil and yogurt, continuing to mix at low speed until incorporated. If you want to add vanilla essence, now is the time. This will give the cake a subtle and pleasant aroma.

4. In another bowl, combine the flour, baking powder, and salt. Sifting the flour helps aerate it, contributing to the final fluffy texture. Gently fold the flour mixture into the egg mixture using a spatula or wooden spoon. Avoid over-mixing to maintain aeration.

5. Preheat the oven to 180°C (350°F). Grease a baking pan (preferably round) with butter or oil and dust it with flour to prevent sticking.

6. Pour half of the batter into the prepared pan. Add the jam on top, leaving a little space at the edges. Cover with the remaining batter, ensuring the jam is well wrapped.

7. Bake the cake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Finally, let the cake cool in the pan for 10 minutes, then transfer it to a cooling rack.

Serving suggestions:

The jam cake is delicious both warm and cold. I recommend serving it with a cup of tea or coffee, and for a touch of elegance, you can sprinkle some powdered sugar on top before serving. If you want to experiment, you can add chopped nuts or chocolate chips to the batter for an interesting texture.

Possible variations:

Instead of jam, you can use fruit preserves or jelly, such as raspberry or cherry. You can also add spices like cinnamon or nutmeg to give your cake a flavorful twist.

This jam cake is not only easy to prepare but will surely become a family favorite. By experimenting with different flavors and ingredients, each time will be a new delicious discovery!
