Tuna and Zucchini Burger
To prepare delicious vegetable burgers, we start by sautéing the onion in butter over low heat, adding a pinch of salt to help release the natural juices. It is recommended to stir periodically to prevent burning. The onion will take on a golden color and a caramelized texture, which will add a sweet and rich note to our burgers. Once the onion is ready, let it cool slightly, as we want to preserve the intense flavor without cooking the other ingredients.
In parallel, we prepare the peppers. Roast the peppers on a stovetop or in the oven until the skin becomes charred and can be easily peeled off. After they have cooled, peel off the skin and set them aside to keep their fresh flavor. The zucchini also needs to be prepared carefully; cut it into cubes, then squeeze well to eliminate excess water. This step is essential to avoid a mixture that is too wet.
In a large bowl, combine all the ingredients for the burgers: the squeezed zucchini, sautéed onion, roasted peppers, and add the desired spices. Breadcrumbs will be used to bind the mixture, so adjust the amount according to the moisture obtained. The mixture should be compact enough to form the burgers, but not too dry.
For the sauce, in a blender, add a boiled egg yolk, roasted pepper, Dijon mustard, and olive oil. Season with salt and pepper, then pulse until you achieve a smooth and creamy texture. It is important to taste the sauce and adjust the seasoning, as each ingredient contributes to a unique flavor.
In a skillet, heat a little olive oil. Divide the burger mixture into four equal portions, shape them into well-compacted disks, and then fry them until golden and crispy on the outside, being careful to turn them gently so they don't crumble.
The burger buns are cut in half, and on the top side of each half, spread the prepared sauce. On the bottom side, arrange a bed of fresh arugula, grated carrot, followed by the vegetable burger, and finish with the other half of the bun. These burgers are not only delicious but also packed with nutrients, perfect for a healthy meal. If using jarred roasted red peppers, just add half the amount, along with a teaspoon of Dijon mustard, to avoid overwhelming the flavors. Enjoy the burgers alongside an extra sauce or a fresh salad!
Ingredients: For 4 burgers: 1 finely chopped onion, 20 g butter, 1 can of tuna chunks in its own juice, drained, 1 small zucchini grated (approximately 100-130 g), 1 organic egg lightly beaten, 1 tablespoon chopped parsley, 1/2 teaspoon sage, 1 teaspoon freshly squeezed lemon juice, sea salt or fine pink salt, a small pinch of cayenne pepper, freshly ground black pepper, 1 cup grated cheddar (you can also use cheese), 1/2 cup breadcrumbs. For 4 servings of assembly: 1 red bell pepper, 1 boiled egg yolk, 4 tablespoons extra virgin olive oil, salt and pepper, 2 teaspoons Dijon mustard, 1/6 red onion chopped, 4 buns or pretzels (preferably homemade), 1 handful of washed and dried arugula, 1 grated carrot, pitted olives halved.
