To prepare a delicious vegetable soup, the first step is to clean the vegetables. Start by washing the carrots, potatoes, parsley, and pumpkin, removing any impurities. Cut the carrots and potatoes into suitable cubes, and you can chop the parsley finely. The onion, on the other hand, should be chopped into larger pieces to add an interesting texture to the soup.

The pumpkin should be carefully peeled, keeping a larger piece. This will be roasted separately and will bring a pleasant contrast of flavor. In a large pot, add the olive oil and heat it over medium heat. Once the oil is hot, add the chopped onion and let it sauté, stirring occasionally to prevent burning. The aroma of the sautéed onion will fill the kitchen, setting the stage for the vegetables to come.

After a few minutes, when the onion becomes translucent, add a cup of water, then add the carrots, parsley, potatoes, and pumpkin cubes one by one. Make sure all the vegetables are covered with water and add the vegetable seasoning and pepper to taste. Let the soup simmer over medium heat, covered, until the vegetables are well cooked and tender.

Once the vegetables are cooked, transfer everything to a blender and blend until you get a smooth cream, without any water. This cream should be creamy and homogeneous, and then you reintroduce it into the pot where the vegetables were cooked. Let the soup come to a boil so that the flavors combine beautifully.

Meanwhile, in a pan, add some slices of homemade smoked sausage, without oil, and let them fry over medium heat. The sausages will release their fat and flavors, and when they become crispy, remove them from the pan and set them aside. In the same pan, add the pumpkin cubes you saved and the pumpkin seeds. Fry them until golden and crispy.

Finally, serve the soup hot in deep plates. Sprinkle the fried sausage slices, pumpkin cubes, and roasted seeds on top. This soup is not only nutritious but also full of varied flavors that complement each other perfectly. Enjoy every bite and savor a healthy and delicious meal!
