Brief History
Little cakes have a rich history and are often associated with celebrations. Their origins are found in baking traditions across cultures, where sweets were prepared to celebrate special moments. This modern recipe pays homage to those traditions, combining classic techniques with contemporary ingredients.
Step by Step
1. Preparing the base
1. Separating the eggs: Start by separating the egg whites from the yolks. Make sure there are no traces of yolk in the egg whites, as they need to be whipped.
2. Whipping the egg whites: Use an electric mixer to whip the egg whites until they form a foam. Gradually add the sugar and continue mixing until you achieve a firm and glossy meringue.
3. Mixing the yolks: In a separate bowl, mix the yolks with the oil and vanilla sugar. Ensure you have a homogeneous mixture.
4. Combining the ingredients: Gently fold the yolk mixture into the whipped egg whites, using a spatula to avoid losing air.
5. Adding the flour: Gradually add the flour, mixing gently. Finally, extinguish the baking powder with the lemon or orange juice and incorporate it into the mixture.
6. Baking: Preheat the oven to 180 degrees Celsius. Grease a pan with butter and dust it with flour. Pour the base mixture into the pan and bake for 35-40 minutes. Use the toothpick test to check if it’s done.
2. Preparing the syrup
1. Mixing the ingredients: In a bowl, combine the water, vanilla sugar, and rum essence. Mix well until the sugar completely dissolves. This syrup will add moisture and flavor to your little cakes.
3. Preparing the creams
1. Cream 1: Prepare the pudding according to the package instructions, using 500 ml of milk and 2 tablespoons of sugar. Once cooled, divide the pudding in half. Mix one half with the whipped liquid cream, yogurt, and vanilla sugar.
2. Cream 2: In the remaining half of the pudding, add Finetti and mix well. Then, fold in the whipped liquid cream and the orange cubes.
4. Assembling the little cakes
1. Cutting the base: Once the base has completely cooled, cut it into four equal pieces.
2. Soaking the base: Using a pastry brush, soak each piece of base with the prepared syrup.
3. Adding the creams: On the first two pieces, spread cream 1, and on the other two, cream 2. You can create an ombre effect by alternating the creams, for example, placing the vanilla cream on the first piece and the chocolate cream on the second.
5. Decorating
1. Decoration: Use melted chocolate to decorate the little cakes. You can create lines or spirals on the surface. Add liquid cream on top for a more elegant look.
Practical Tips
- Choose ingredients carefully: Use fresh eggs to achieve a fluffy base and a stable meringue.
- Toothpick test: Ensure the base is fully baked before removing it from the oven. The toothpick should come out clean.
- Variations of creams: You can also add other fruits, such as strawberries or kiwi, for an extra freshness.
- Serving: These little cakes are perfect to be served with a cup of tea or flavored coffee, making them the ideal dessert for a special afternoon.
