Muffins with Turkish Delight
I propose a delicious recipe for marshmallow muffins that will delight both you and your loved ones. We start by cutting the marshmallows into small pieces, ensuring that each piece is uniform. Then, we take the powdered sugar and roll the marshmallow pieces in it, so that they are coated on all sides. This step will not only add a sweet taste but will also prevent the pieces from sticking together. Once we are done, we set the marshmallows aside and take care of the other ingredients.
In a large bowl, we sift the flour together with the baking powder to avoid lumps and ensure a fluffy texture. Then, we add the grated orange zest, which will provide an inviting aroma and a note of freshness to our muffins. In another bowl, we mix the eggs with the sugar until the mixture doubles in volume and becomes creamy, and the sugar dissolves completely.
As we continue to beat, we add the oil in a thin stream, being careful to incorporate the ingredients well. Towards the end, we add the vanilla and yogurt, mixing gently to achieve a homogeneous composition. Now comes the crucial moment: we pour the liquid ingredients over the dry ones. It is essential to mix gently, folding from bottom to top, just until the ingredients are integrated. Here, patience is key; the less we mix, the fluffier the muffins will be.
We prepare the muffin molds, whether they are paper or silicone, and put 2-3 tablespoons of the batter into each mold, without filling them completely, leaving about ¼ of the mold height free. We decorate each muffin with colorful pieces of marshmallow so that they are visually appealing. It is important to bake the muffins immediately after we finish the batter, to maintain freshness and avoid losing air from the mixture.
Before placing the tray in the preheated oven, do not forget to add water to the empty spaces in the muffin tray. This trick will help the muffins bake evenly. We bake at a low temperature, on the middle rack, for 15-25 minutes or until they pass the toothpick test, meaning the toothpick comes out clean. Be careful not to leave the muffins in the oven too long, as they can brown excessively and dry out.
After we take them out of the oven, we let the tray cool for 5 minutes, then transfer the muffins to a rack to cool completely. These delights can be served warm or cold, plain or sprinkled with powdered sugar, being perfect for any occasion. Enjoy every bite!
