Discover a cake that perfectly combines sweetness and acidity: Lemon Cake. This simple yet spectacular recipe will quickly become a family favorite. With a fluffy base, a flavorful cream cheese filling, and an orange glaze, each bite is an explosion of flavors that will delight your senses.

Ingredients:

For the base:
- 6 eggs (make sure they are fresh for a fluffy result)
- 6 tablespoons of sugar
- 4 tablespoons of flour
- 100 ml of oil (preferably sunflower oil for a neutral taste)
- 1 teaspoon of baking powder

For the cream:
- 500 g of sweet cheese (choose a well-drained cheese to avoid excess liquid)
- 200 g of butter (at room temperature for easy incorporation)
- 150 g of sugar
- 1 teaspoon of vanilla essence
- Zest of one lemon (for an extra flavor)

For the glaze:
- 850 ml of fresh orange juice (about 8 large oranges)
- 2 packets of vanilla pudding (this will help thicken the glaze)
- 5 tablespoons of sugar (you can adjust to taste)

Preparation steps:

Step 1: Prepare the base
Start by separating the egg whites from the yolks. In a large bowl, beat the yolks with the sugar until the mixture becomes light in color and doubles in volume. Gradually add the oil, mixing continuously to obtain a homogeneous composition. Fold in the flour mixed with the baking powder, gently mixing with a spatula.

In another bowl, beat the egg whites until stiff peaks form. Gradually add the egg whites to the yolk mixture, using gentle folding motions to maintain the air in the mixture.

Prepare a 32/24 cm baking tray lined with parchment paper, and pour the batter evenly. Bake in a preheated oven at 180°C for 25 minutes, until golden. Let it cool completely.

Step 2: Prepare the cream
While the base is cooling, prepare the cream. Beat the butter with the sugar until fluffy. Add the sweet cheese, vanilla essence, and lemon zest, mixing until well combined. Once the base has cooled, spread the cream cheese evenly over it. Refrigerate the cake for at least 1 hour to firm up the cream.

Step 3: Prepare the glaze
For the glaze, squeeze the orange juice and place it in a saucepan. Add the sugar and vanilla pudding, stirring constantly to avoid lumps. Cook over medium heat until the glaze begins to thicken. Let it cool slightly, then spread it evenly over the cream cheese.

Return the cake to the refrigerator for a maximum of 2 hours, until the glaze sets.

Step 4: Serving
Once the cake has completely cooled, cut it into servings and enjoy each piece! You can serve the Lemon Cake with a few slices of fresh orange or a mint leaf for an elegant touch.

Helpful tips:
- Make sure all ingredients are at room temperature for optimal results.
- You can substitute sweet cheese with mascarpone for a richer cream.
- For an even more intense flavor, add a few drops of lemon juice to the cream cheese.

Enjoy this quick and delicious dessert, perfect for any occasion, and don’t forget to share the recipe with friends! Enjoy your meal!
