To prepare a delicious baked polenta with eggs and cheese, start by boiling a firmer polenta using quality cornmeal. To achieve an optimal consistency, use a ratio of 1 part cornmeal to 4 parts water. Place the water in a pot over medium heat and bring it to a boil. When the water starts to boil, gradually add the cornmeal, continuously stirring with a whisk to prevent lumps from forming. Boil the polenta for about 15-20 minutes, stirring occasionally, until it becomes compact and pulls away from the sides of the pot.

While the polenta is boiling, prepare a heat-resistant dish that you generously grease with butter. It is important to use a generous amount of butter to prevent the polenta from sticking to the dish and to add extra flavor. Once the polenta is ready, remove it from the heat and mix it with the same amount of cheese, whether it is cottage cheese, telemea, or feta cheese, depending on your preferences. The resulting mixture should be homogeneous and flavorful, with the cheese partially melting into the warm polenta.

Place the polenta and cheese mixture into the heat-resistant dish, leveling it with a spatula. Using a ladle greased with a little oil, create indentations where you will crack the eggs. This will create a nice appearance and allow the eggs to cook evenly. Add a small cube of butter to each indentation and sprinkle with salt, pepper, and if desired, spices such as sweet paprika or thyme for a more intense flavor.

Preheat the oven to 180 degrees Celsius and place the dish with polenta and eggs inside. Let it bake for 20-25 minutes, or until the egg whites are well set and the top of the polenta becomes slightly browned.
