The meat is cut into slices, and then each slice will be cut into equal-sized cubes or strips the thickness of a finger, to ensure even cooking. In a large bowl, mix all the other ingredients, which may include olive oil, crushed garlic, lemon juice, herbs, salt, and pepper. Once you have a homogeneous mixture, add the pieces of meat and make sure they are well coated on all sides with the marinade. Cover the bowl with plastic wrap or transfer the meat to a resealable bag, which you will tie tightly to prevent the spices from leaking. Place everything in the refrigerator for at least one night, but ideally, you should let the meat marinate for 24 hours to allow the flavors to integrate perfectly.
The next day, prepare the skewers. If you are using wooden skewers, it is essential to soak them in water for 30 minutes. This step will prevent the skewers from burning on the grill. After that, take a strip of meat or a few cubes and pierce them with each skewer. Make sure not to overcrowd them too tightly to allow air circulation and even cooking.
Preheat the grill to a medium-high temperature. Place the skewers on the grill, being careful not to overlap them. Cook for 2-3 minutes on each side until they become golden and crispy. During cooking, you can turn them once or twice to achieve an even crust on all sides.
Once they are ready, serve the skewers alongside a slice of fresh bread and a glass of wine, preferably a red one, which will perfectly complement the intense flavors of the meat.
