Savarin with Whipped Cream and Orange Syrup

Savarin is a dessert that masterfully combines the fluffy texture of a cake with the intense flavors of orange syrup, offering an unforgettable sweet experience. Its origins are shrouded in mystery, but today, this dessert is loved by all who taste it. From parties to family gatherings, savarin is the perfect choice for any occasion. In this recipe, I will show you how to prepare delicious savarins, much better than store-bought ones, with a sweet and aromatic syrup and a rich filling of whipped cream.

Preparation time: 30 minutes
Baking time: 20 minutes
Total time: 50 minutes
Number of servings: 12

Ingredients:

For the base:
- 6 eggs
- 6-7 tablespoons of sugar
- 1 packet of vanilla sugar or 1 teaspoon of vanilla extract
- 8 heaping tablespoons of white breadcrumbs
- Grated zest of one orange or 1 teaspoon of orange extract

For the syrup:
- 100-150 g of sugar
- 450 ml of water
- 1 teaspoon of rum extract
- Grated orange zest or 1 teaspoon of orange extract

For the filling:
- 350 ml of liquid cream
- Red gelatin (according to package instructions)
- Optional: a little red food coloring or as desired

Preparation:

1. Start by preparing the base. In a large bowl, beat the egg yolks with sugar and vanilla sugar for about 10 minutes, until the mixture becomes creamy and whitens. This step is essential as the incorporated air will make the savarins fluffy and delicate.

2. Add the breadcrumbs, one tablespoon at a time, ensuring it is well combined after each addition. It is important to use white breadcrumbs as this will provide a fine texture and contribute to the final taste of the savarins.

3. In another bowl, beat the egg whites with a pinch of salt until stiff peaks form. This step will add volume to your savarins, making them light and airy.

4. Carefully fold the egg whites into the yolk mixture using a spatula and gentle up-and-down motions to avoid losing the air from the egg whites. Finally, add the grated orange zest or orange extract for an extra flavor boost.

5. Preheat the oven to 180°C (350°F) and grease the savarin molds with a little melted butter. If you don’t have special molds, you can use muffin tins, but make sure to grease them well to prevent sticking.

6. Pour the mixture into the prepared molds and bake for 15-20 minutes, or until the savarins are golden and pass the toothpick test. Let them cool in the molds for a few minutes, then transfer them to a wire rack to cool completely.

7. Meanwhile, you can prepare the syrup. In a saucepan, lightly caramelize the sugar until golden, then add the water. Boil the mixture until the caramel is completely melted, then let it cool slightly. Add the rum extract and orange zest to enhance the syrup's flavor.

8. Once the savarins have cooled, dip them in the warm syrup, ensuring they soak well. It is recommended to let them sit in the syrup for a few minutes to absorb the flavor and sweetness.

9. Cut a small cap off the top of each savarin and fill them with whipped cream. To make the whipped cream, beat the liquid cream according to the package instructions, adding the two tablespoons of sugar. If desired, you can add a little red food coloring for a more attractive appearance.

10. Prepare the gelatin according to the package instructions. If you prefer, you can use fruit jam instead of red gelatin for a different flavor note. Put a little gelatin on top of the savarin and refrigerate until serving.

Useful tips:
- Make sure all ingredients are at room temperature before starting the cooking process. This will help achieve a better texture.
- Depending on your preferences, you can experiment with different flavors for the syrup, such as vanilla or almond extract.
- Savarins keep well in the refrigerator, but it is recommended to consume them within 2-3 days to enjoy their freshness.

Nutritional benefits:
Savarin is a dessert rich in carbohydrates, but also a source of healthy fats from whipped cream. The orange zest adds a dose of vitamin C, essential for the immune system. Although it is a caloric dessert, consumed in moderation, it can be part of a balanced diet.

Ideal combinations:
Savarin pairs wonderfully with a cup of aromatic coffee or green tea. You can also add vanilla or orange ice cream for a delicious contrast. This cake will surely be the star of your table!
