Meatballs with Zaatar and Sumac
I decided to experiment with the food processor to prepare a delicious meatball recipe, a perfect choice for a family meal. Usually, we prefer finer ground meat, so I opted for a more minced texture that will blend perfectly with the ingredients I chose. Sumac, a popular spice in the Middle East, will add a tangy-astringent note that will transform these meatballs into a culinary delight.
I start by grating my favorite vegetables, such as carrots, zucchini, and onion, using a grater. These will add moisture and flavor to the dish. After I have enough grated vegetables, I mix them with ground meat. In a large bowl, I combine the ground meat with the vegetables, add a fresh egg to bind everything together, and ensure a fluffier texture.
Then, it’s time to season this mixture. I add za'atar, a fragrant blend of herbs that will enhance the flavor of the meatballs, and crushed garlic for a stronger taste. I don’t forget to add salt and pepper to taste, to balance the flavors. With wet hands, I form meatballs of appropriate size, making sure they are uniform for even cooking.
Unlike the traditional frying method, I chose to bake the meatballs in the oven. I place the meatballs on a baking tray lined with parchment paper and put them in the preheated oven. At a temperature of 180 degrees Celsius, I leave them until they turn golden and browned on both sides. This method is not only healthier but also preserves the juiciness of the meatballs.
Once they are ready, I sprinkle sumac on top to give them an appealing look and an extra burst of flavor. The meatballs can be served hot or cold, making them ideal for a snack or an appetizer. They can be accompanied by a fresh salad or a portion of hummus, to bring a touch of Eastern culinary culture.
