Orange Muffins
To prepare delicious and fluffy muffins, we start by melting the butter in a small container over medium heat. Once fully melted, we let the butter cool slightly so it doesn't coagulate the eggs when we add them. In a large bowl, we add the sugar, vanilla sugar, orange juice and zest, buttermilk, eggs, and raisins. These ingredients will add an intense and pleasant flavor to the muffins, while the raisins will provide a delicious texture. Using a whisk, we combine the ingredients, being careful not to overbeat the mixture to maintain a light consistency.
In another bowl, we sift the flour together with the baking powder. This step is essential to introduce air into the flour, which will help the dough rise. After sifting the dry ingredients, we carefully pour the liquid ingredient mixture over the flour. Using a spoon, we gently mix, just enough to combine the ingredients. It is important not to mix vigorously, as this would promote gluten network formation, leading to denser muffins.
Once the mixture is combined, we prepare the muffin molds. Whether we choose paper or silicone molds, it is important to fill them with about 2 tablespoons of the batter, being careful not to exceed ¾ of their height to allow the muffins to rise nicely during baking. We preheat the oven to 180 degrees Celsius, and when it reaches the desired temperature, we place the tray on the middle rack.
We bake the muffins for 15-25 minutes on low heat, checking them periodically. When they turn golden and pass the toothpick test, they are ready. We do not let them brown too much, as we want their texture to remain soft and fluffy. After removing them from the oven, we let the tray cool for 5 minutes, then transfer the muffins to a rack to cool completely.
These delights can be served warm or cold, plain or dusted with powdered sugar, and each bite will bring an explosion of flavor and aroma.
