Cordon Bleu is a refined and savory dish, perfect for a special dinner or to impress your guests. This simple recipe transforms pork tenderloin into a delight, filled with melted cheese and kaiser, offering a fantastic contrast of textures and flavors. Follow the steps below for a perfect result!

Ingredients:
- 4 slices of pork tenderloin (about 1.5 cm thick)
- 100 g of cheese (preferably a cheese that melts well)
- 100 g of kaiser (or smoked ham)
- 2 eggs
- 150 g of breadcrumbs
- 100 g of flour
- Salt and pepper to taste
- Oil for frying
- Fresh herbs (optional, for garnish)

Preparation:
1. Preparing the pork tenderloin: Start by cleaning the pork tenderloin slices of any skin or excess fat. Use a meat mallet to flatten the slices. This step is essential for ensuring even cooking and achieving a tender texture. Don't overdo it to avoid destroying the meat.

2. The filling: Cut the cheese and kaiser into thin strips. Place one strip of kaiser and one of cheese on each slice of tenderloin. Make sure the filling is well distributed, leaving the edges free to seal the dish.

3. Wrapping: Fold each slice of tenderloin so that it completely covers the filling. You can use toothpicks or kitchen twine to secure the edges, thus preventing the filling from leaking during frying.

4. Breading: Prepare a bowl with flour, one with beaten eggs, and another with breadcrumbs. Dip each Cordon Bleu in flour, then in the beaten eggs, and finally in the breadcrumbs. This process will create a crispy and delicious crust.

5. Frying: Heat a pan with oil over medium heat. Add the Cordon Bleu to the pan, being careful not to overcrowd them. Fry for 4-5 minutes on each side or until golden and crispy. Make sure the heat is not too high; otherwise, they will brown on the outside and remain raw inside.

6. Baking: Transfer the fried Cordon Bleu to a baking dish and place them in a preheated oven at 180°C for another 10-15 minutes. This step will ensure that the filling melts perfectly and that the dish is cooked evenly.

7. Serving: Cordon Bleu can be served alongside a fresh green salad or mashed potatoes for a balanced meal. Sprinkle a little fresh herbs on top for an attractive appearance.

Practical tips:
- If you want a healthier option, you can bake the Cordon Bleu instead of frying them, at 200°C for 20-25 minutes.
- Experiment with alternative fillings: feta cheese and spinach or sautéed mushrooms and mozzarella.
- Make sure the oil is hot enough before adding the meat; this way, you will achieve a crispy crust.

This pork tenderloin Cordon Bleu recipe is easy to prepare, yet impresses with its exceptional taste. Enjoy every bite and cherish the compliments from your loved ones!

I cut the meat into pocket-style pieces and tenderized it well. I salted and peppered it and filled it with ham and cheese. I secured it with toothpicks and coated it in flour. I let it chill. I made a mixture of: egg, flour, mint, hot and sweet paprika, basil. Thinned with ayran, I dipped the pork pieces in it and fried them in hot oil.
