Chicken roll with rose sauce and vegetable rice

Ingredients:

For the roll:
- 150 g chicken breast
- 25 g pressed ham
- 25 g mushrooms (preferably champignon)
- 10 g cheese
- Salt and pepper to taste

For the tomato sauce:
- 100 g tomato sauce
- 50 g sweet cream
- 5 ml brandy (optional, for extra flavor)
- Salt and pepper to taste

For the vegetable rice:
- 70 g rice
- A small onion
- 1 small carrot
- 1 small bell pepper
- Salt and pepper to taste
- Fresh parsley for decoration
- 10 g butter

Preparing the chicken roll:

1. Start by preparing the chicken breast. Place it on a clean surface, between two sheets of plastic wrap, and gently pound it with a meat mallet until it becomes even and thin.

2. Cut the pressed ham into small cubes and slice the mushrooms thinly. Grate the cheese. Mix all the ingredients (ham, mushrooms, and cheese) in a bowl, adding salt and pepper to taste.

3. Spread the filling mixture evenly over the chicken breast, leaving a 1 cm edge. Carefully roll the chicken breast, forming a tight roll, and secure it with toothpicks or by tying it with kitchen twine.

4. Heat a non-stick skillet with a little oil and fry the roll on all sides until golden. Transfer the roll to a baking dish and bake it in the preheated oven at 180°C for 25 minutes or until the meat is well cooked.

Preparing the tomato sauce:

5. While the roll is in the oven, prepare the rose sauce. In a small pot, combine the tomato sauce with the sweet cream and brandy (if using). Season with salt and pepper and let it simmer on low heat for 5-10 minutes, stirring occasionally to prevent sticking.
