Diplomat Cake
Diplomat Cake with Fruits – The Grandchildren's Delight
Some recipes have the power to create memories and bring smiles to the faces of loved ones. The Diplomat Cake is one of those desserts that has managed to win the hearts of my grandchildren, Gabriel and Anamaria. Every time I have the chance, I start making this delicious cake, and its inviting aroma and creamy texture make them come back to my table with persistent requests.
This cake is perfect for any occasion, whether it’s an anniversary, a celebration, or simply a family Sunday. It is a quick, easy-to-make, and extremely versatile dessert, which can be adapted according to preferred or seasonal fruits. Let’s begin our culinary journey!
Preparation time: 30 minutes
Chilling time: 4-5 hours
Number of servings: 10-12
Ingredients:
- 5 packets of gelatin (about 10 g each)
- 1 can of pineapple (about 400 g)
- 1 L of HULALA whipped cream
- 1 can of sour cream (about 200 g)
- 4 large eggs
- 250 g of sugar (about 1 cup)
- 250 ml of milk (about 1 cup)
- Fresh fruits (kiwi, pineapple, oranges, bananas, berries, etc.)
Preparation:
Step 1: Preparing the gelatin
Start by preparing the gelatin. Place the 5 packets of gelatin in a small bowl and add enough cold water to cover them. Let them soften for about 10 minutes. Then, drain the gelatin and transfer it to a saucepan. Add the pineapple juice from the can, but be careful not to bring it to a boil. Stir constantly until completely dissolved. Let the gelatin cool, but do not let it set; it should be at a temperature where you can hold your finger in it.
Step 2: Preparing the whipped cream
In a large bowl, add the HULALA whipped cream and sour cream. Use an electric mixer and beat them until you achieve a fluffy and thick whipped cream. This mixture will give the cake a creamy texture and wonderful taste. Make sure not to overbeat it, or it will turn into butter.
Step 3: Egg cream
In a saucepan, place the 4 eggs, sugar, and milk. Mix well and place the saucepan over low heat. Cook the ingredients, stirring constantly, until the mixture thickens and becomes creamy, similar to a pudding. When ready, remove it from the heat and let it cool, ensuring you can hold your finger in it.
Step 4: Combining the ingredients
Now that all mixtures are cooled, it’s time to combine them. In a large bowl, add the cooled egg mixture over the whipped cream and sour cream. Carefully add the melted gelatin and gently mix with a spatula, so as not to lose the air in the whipped cream. This mixture will be the creamy base of our cake.
Step 5: Assembling the cake
Prepare a cake pan or loaf pan by lining it with cling film. This step is very important, as it will help in removing the cake once it has set. Start adding layers of fresh fruits, alternating with the creamy mixture. You can combine any fruits you like, but my recommendation is to use pineapple, kiwi, and berries for a contrast of colors and flavors. Continue adding layers until you finish all the ingredients.
Step 6: Chilling
After the cake is assembled, cover it with cling film and refrigerate for at least 4-5 hours or, ideally, overnight. This chilling time is essential for the gelatin to set and for all the flavors to meld together.
Serving:
When you are ready to serve the cake, carefully remove the cling film and decorate with fresh fruits or whipped cream, as desired. You can also add a chocolate glaze or caramel sauce for an extra touch of flavor. This cake is perfect alongside a cup of tea or coffee, but it can also be a splendid dessert for a festive meal.
Nutritional benefits:
The Diplomat Cake is a relatively light choice, considering its ingredients. The whipped cream and sour cream provide calcium, while fresh fruits are full of vitamins, minerals, and antioxidants. Gelatin is a good source of collagen, beneficial for joints and skin.
Frequently asked questions:
1. Can I use vegan gelatin?
Yes, you can use agar-agar as an alternative to animal gelatin. Follow the instructions on the package to prepare it correctly.
2. What fruits can I use instead of those mentioned?
You can experiment with seasonal fruits or those preferred by your family. Mango, peaches, or berries are all excellent.
3. How do I store the cake?
The cake stores well in the refrigerator for 2-3 days, covered with cling film.
4. Is this cake suitable for vegans?
Not in its original form, but you can adapt the recipe using plant-based milk, coconut cream, and vegan eggs.
Customized version:
For an interesting twist, you can add a few drops of vanilla or orange essence to the egg mixture to enhance the flavor. Additionally, a splash of fruit liqueur can add a sophisticated note to the cake.
Now that you have all the necessary information, all that’s left is to get cooking! The Diplomat Cake will surely become a family favorite, just like it is for Gabriel and Anamaria. Enjoy every step and don’t forget to have fun while cooking!
