To prepare a kiwi delight, we will start by separating the eggs, being careful not to mix the yolks with the whites. The egg whites are beaten until they become firm and fluffy, and this step is essential for achieving an airy texture for the cake. In a separate bowl, the soft butter at room temperature is mixed with sugar until the mixture becomes creamy and light in color. We then add the yolks, a pinch of salt to enhance the flavor, and continue to mix well until all the ingredients are evenly combined.

Once we have a homogeneous mixture, it is time to deal with the kiwi. We wash the fruits well, peel them, and cut them into small cubes so that they integrate perfectly into the batter. We add the diced kiwi to the bowl with the butter and sugar mixture and carefully mix it in. Then, we sift the flour into another bowl, adding the baking powder. This step is important to avoid lumps in the batter. Gradually, we incorporate the flour into the wet mixture, mixing with a spatula or a wooden spoon.

After the flour is well integrated, it is time to add the beaten egg whites. We do this with a gentle motion, from top to bottom, to keep the air in the whites, which will make the cake fluffy. Finally, we add the nuts, which have been previously ground and dusted with flour to prevent them from settling at the bottom of the cake. The final mixture should be homogeneous but airy.

Now we prepare the baking pan, greasing the bottom and sides with butter and dusting it with flour. This will prevent the cake from sticking and will make it easier to remove after baking. We pour the batter into the pan and can add a few pieces of kiwi on top for an attractive look and extra flavor. We bake the cake in a preheated oven at medium heat for about 30-40 minutes, or until a toothpick inserted in the center comes out clean. Once baked, we let it cool slightly before removing it from the pan. This kiwi and walnut cake will be a refreshing and delicious dessert, perfect for any occasion!
