Ingredients:

- 4 medium potatoes (preferably white potatoes, which mash better)
- 1 egg
- Salt and pepper, to taste
- A pinch of nutmeg (for a more sophisticated flavor)
- 3-4 tablespoons of flour (use white or whole wheat flour, depending on your preference)
- 2 kabanos sausages (you can also use other types of sausages, to taste)
- 100 g cheese (I recommend smoked cheese for added flavor)
- Chopped fresh parsley, for a touch of freshness
- 10 thin slices of bacon (you can also opt for ham, if you prefer)

Instructions:

1. Boiling the potatoes: Start by washing the potatoes well, then place them in a pot of salted water. Let them boil until soft, and a fork easily pierces them (about 20-25 minutes).

2. Peeling and mashing: After boiling, drain the water and rinse them under cold water to stop the cooking process. Peel them and place them in a bowl. Mash well with a potato masher or hand mixer until you get a smooth puree.

3. Seasoning: Add salt, pepper, and a pinch of nutmeg to the potato puree. Then, add the egg and flour, mixing until you get a homogeneous mixture. The flour will help bind the mixture.

4. Forming the base: Spread a piece of cling film on the work surface and grease it with a little butter. With slightly floured hands, spread the potato mixture into a thin layer, about 1 cm thick.

5. Preparing the filling: Cut the kabanos sausages into thin slices, grate the cheese on a large grater, and finely chop the parsley. Evenly distribute the kabanos slices over the potato base, cover them with the grated cheese, and sprinkle the chopped parsley on top.

6. Rolling: Using the cling film to assist, roll the potato base as tightly as possible, forming a roll. Make sure the filling is well wrapped in the potatoes.

7. Bacon weave: Start weaving the bacon slices on a flat surface, forming a rectangle or square, depending on the size of your baking dish.

8. Wrapping the roll: Place the potato roll in the center of the bacon weave and carefully wrap it. Shape the roll with your hands to secure it well.

9. Baking: Transfer the roll to a loaf pan lined with parchment paper (I only used paper on the bottom of the pan) and place it in a preheated oven at 180°C. Bake for 45-50 minutes or until the bacon becomes crispy and golden. Check from time to time to drain any melted fat to avoid an overly greasy dish.

10. Finishing: Once the roll is ready, let it cool in the pan for about 10 minutes, then slice and serve.
