Number of servings: 12

Necessary ingredients:

For the base:
- 6 large eggs
- 6 tablespoons sugar
- 4 tablespoons flour
- 2 tablespoons oil
- 5 tablespoons roasted and chopped walnuts
- 1 baking powder
- 1 essence of rum

For the orange cream:
- 2 egg yolks
- 5 tablespoons sugar
- Juice from one orange
- 1 package of butter (approx. 200g), at room temperature
- 1200 ml liquid cream

For the chocolate cream:
- 3 tablespoons cocoa
- 5 tablespoons sugar
- 5 tablespoons water

For the syrup:
- 1 cup sugar
- 2 cups water
- 1 tablespoon margarine or butter
- 1 essence of rum

For the glaze:
- 3 tablespoons cocoa
- 5 tablespoons sugar
- 5 tablespoons water
- 2 tablespoons margarine

Decoration:
- Sugar paste daisies
- Whipped cream
- Remaining orange cream

Preparation:

1. Preparing the base: Start by separating the eggs. Beat the egg whites with sugar until stiff and glossy. Add the yolks, oil, and gently mix until combined. Sift the flour with the baking powder and gradually incorporate them into the egg mixture, followed by the chopped walnuts. Pour the mixture into a baking tray lined with parchment paper and bake at 180°C for about 30 minutes. Check with a toothpick if it’s baked, then let it cool.

2. Orange cream: In a saucepan, combine the egg yolks with sugar and orange juice. Cook over low heat, stirring constantly until thickened (about 5-7 minutes). Let it cool, then mix with the softened butter until it becomes a smooth cream.

3. Chocolate cream: In another saucepan, mix cocoa, sugar, and water. Boil over low heat until a thick syrup forms. Let it cool and then gently fold it into the whipped cream.

4. Preparing the syrup: In a skillet, caramelize the sugar until golden, then add the water and margarine. Let it boil for a few minutes until you obtain a homogeneous syrup. Add the rum essence.

5. Glaze: Combine cocoa, sugar, and water in a saucepan, bring to a boil until homogeneous. Remove from heat and add margarine, mixing well.

6. Assembling the cake: Cut the base into three equal slices. Soak the first slice with the sugar syrup, add a layer of cream with whipped cream, then place the second slice and repeat the process, alternating with the orange cream. Cover with the third slice of base and pour the warm glaze on top.

7. Decorating: Use the remaining orange cream to make patterns on the cake and decorate with sugar paste flowers and whipped cream.

Useful tips:
- Make sure all ingredients are at room temperature for a uniform mixture.
- Roasted walnuts add an intense flavor, but you can replace them with almonds or hazelnuts for a variation in texture.
- If you prefer a less sweet cake, adjust the amount of sugar in the creams.

This chocolate and walnut cake is perfect for holidays or any special moment. Serve it with a scoop of vanilla ice cream or a few slices of fresh orange for a delicious contrast! Whether you make it for yourself or for loved ones, each slice will be a true delight.
