Chicken Salad - Delicious Summer Lunch
Ingredients: 500 g chicken breast, 2 eggs, breadcrumbs, 400 g green salad, 3 stalks of celery, 2 carrots, 2 cucumbers, 50 g pitted olives, 4 tablespoons olive oil, 2 tablespoons vinegar, salt, yogurt, mayonnaise, oil for frying. 2 boiled eggs (to taste)
To prepare a delicious and refreshing summer lunch, we will start with chicken, which is the main ingredient of our recipe. It is essential to choose fresh, high-quality chicken breast. We begin by pounding the chicken well to obtain uniform pieces that will cook evenly. We use a meat mallet or a heavy pan for this. After achieving an even thickness, we dip each piece of chicken in beaten egg, ensuring it is well coated, then into breadcrumbs. It is important to repeat this operation once to achieve a crispy and delicious crust.
Once we have prepared all the schnitzels, we fry them in a pan with hot oil, being careful not to overcrowd the pan, allowing each piece to fry evenly and become golden. Alternatively, we can opt for boiling the chicken breast, a healthier option, in salted water, letting it cool before slicing it into thin strips. Both methods are excellent, but I prefer the crispy schnitzels, which provide a pleasant texture and savory taste.
In the meantime, we take care of the vegetables. We will slice the tomatoes, cucumbers, olives, and celery stalk into thin slices, while we will turn the carrots into sticks. These fresh vegetables will add a splash of color and freshness to our dish. Once all the ingredients are prepared, we mix them in a large bowl, seasoning with salt, olive oil, and vinegar to balance the flavors.
To complete the dish, we arrange the salad on a plate, and on top, we place slices of chicken schnitzel, adding a substantial and savory note. One last detail that makes a difference is to grate a little cheese on top, providing a wonderful creamy flavor.
We have also prepared an alternative version with a dressing made of yogurt and mayonnaise, which perfectly complements the salad. This dressing is creamy and refreshing, bringing a pleasant contrast with the crunchy vegetables and schnitzels.
