- 100 ml dry white wine
- Salt and ground pepper, to taste
- Juice from 1/2 lemon (optional, for a fresher taste)
Preparation method:
1. Preparing the fish: Start by cutting the cod fillets into slices about 2-3 cm thick. Mix the flour with a teaspoon of sweet paprika for a subtle taste and pleasant color. Dredge the fish slices in this mixture, ensuring they are evenly coated.
2. Frying the fish: Heat the oil in a large skillet over medium heat. Add the fish slices and fry for 2 minutes on each side until golden. Remove the fish to a plate and let it cool slightly.
3. Cooking the vegetables: In the same skillet, add the dry onion and green onion. Sauté for 2-3 minutes until translucent. Add the carrot, bell pepper, tomatoes, and crushed garlic. Continue sautéing for 5-7 minutes, stirring occasionally.
4. Deglazing: Add the white wine, allowing it to boil for a minute to evaporate the alcohol. Then, add the tomato broth, bay leaf, salt, pepper, and, if desired, the lemon juice. Let it simmer on low heat for 10 minutes.
5. Combining the ingredients: Add the fried fish slices into the vegetable sauce, making sure to coat them with the sauce. Cover the skillet and let it simmer for another 10-15 minutes until all the ingredients are well cooked and the flavors have melded.
