Necessary ingredients:

- 700 g chicken breast, diced
- 210 g canned mushrooms, chopped (about 400 g before draining)
- 150 ml dry white wine
- 125 g Camembert cheese, diced
- 1 medium onion, finely chopped
- 1.6 kg puff pastry (two packages of 800 g each)
- A bunch of fresh parsley, chopped
- 1 tablespoon lemon juice
- Salt and pepper, to taste
- 1 beaten egg (for brushing)
- 2-3 tablespoons sesame seeds (optional)

Preparing the pastries:

1. Thawing the pastry: Remove the puff pastry from the freezer a few hours before starting the recipe. Let it thaw slowly at room temperature so that it is easy to handle.

2. Preparing the chicken: In a pot, add the diced chicken breast, white wine, and lemon juice. Place the pot over medium heat and wait for it to start boiling. Once it begins to boil, reduce the heat, cover the pot with a lid, and let it simmer for 15-20 minutes until the chicken is cooked through. Check occasionally to ensure it doesn't boil over by lifting the lid and stirring.

3. Preparing the filling: Once the chicken is cooked, remove it from the pot and discard half of the liquid. In the same liquid, add the chopped onion and mushrooms, letting them cook on low heat for about 10 minutes until the liquid reduces and the onion becomes slightly sautéed.

4. Mixing the filling: In a large bowl, combine the diced chicken, sautéed mushrooms, onion, chopped parsley, and Camembert cheese. Season with salt and pepper to taste.

5. Forming the pastries: Use a wide-mouthed cup (about 12 cm in diameter) to cut out 24 circles from the puff pastry. If there are leftover pastry scraps, don't throw them away! You can roll them out again between two sheets of plastic wrap to make the most of your ingredients.

6. Assembling the pastries: Preheat the oven to 220 degrees Celsius. Moisten the edges of the pastry circles with the beaten egg. In the center of each circle, place about a tablespoon and a half of filling, then cover with another circle of pastry. Seal the edges by pressing with a fork.

7. Baking: Place the pastries on a baking tray lined with parchment paper, ensuring there is enough space between them. Brush them with beaten egg and sprinkle sesame seeds on top. Reduce the oven temperature to 200 degrees Celsius and bake the pastries for 30-35 minutes until they are golden and crispy.

8. Cooling and serving: Once done, let the pastries cool on a wire rack to maintain their crispy texture. They can be served warm or at room temperature, alongside a fresh salad.
