Marinated Meatballs II
To prepare the delicious meatballs, we start by grinding the meat, ensuring we achieve a fine texture that will allow the spices to integrate perfectly. Then we move on to preparing the spices and herbs. It is essential to wash the fresh ingredients well, and then grate them to release their flavors and juiciness. Once we have all the ingredients ready, we add them to the ground meat and mix vigorously to obtain a homogeneous paste. This step is crucial, as a well-homogenized combination will give a pleasant consistency to the meatballs.
After forming balls of the desired size from the obtained paste, we fry them in a pan with hot oil or, in my case, bake them in the oven to make them healthier. If you choose to fry them, make sure the oil temperature is right to achieve a golden, crispy crust. Once cooked, we place the meatballs in an oven-safe dish, where they will be complemented with a savory sauce.
Separately, we take care of the tomato sauce, which will add an extra flavor to our dish. In a pot, we pour 3-4 tablespoons of oil and add 2-3 tablespoons of flour, stirring continuously to avoid lumps. We let the mixture cook on low heat for 2-3 minutes to achieve a lightly golden roux. Then, we add the tomato puree, stirring well to incorporate the flour. We season the sauce with salt and, if necessary, a teaspoon of sugar, which will balance the acidity of the tomatoes. At this point, we also add a few peppercorns and some bay leaves for extra flavor. We let the sauce simmer for a few minutes so that the flavors can combine.
Once the sauce is ready, we strain it through a sieve to remove the peppercorns and bay leaves, achieving a smooth and velvety texture. This delicious sauce will be generously poured over our meatballs, which will absorb all the flavors. We keep the dish in the oven at a moderate temperature, keeping the dish warm until we prepare the side.
To accompany these marinated meatballs, we prepare a creamy mashed potato, which will perfectly complement the intense flavors of the sauce. Thus, we have a delicious meal that will delight both family and guests. Enjoy your meal!
