For the base (28 cm diameter):
- 10 eggs
- 10 tablespoons of sugar
- 12 heaping tablespoons of ground nuts
- 5 tablespoons of flour
For the syrup:
- 300 ml water
- 4-5 tablespoons of sugar
- 1 vial of rum essence
For the cream:
- 500 g mascarpone
- 1 jar of 750 g DuoCreme
- Sour cherries from cherry brandy (desired amount, pitted)
For frosting the cake:
- 200 ml whipped cream
- 150 g caramelized nuts
Decoration:
- Melted chocolate (for glazing)
- Sugar paste flowers (various shapes and colors)
Preparing the base
1. The night before baking: It is recommended to prepare the base a day in advance, as it cuts much better after being allowed to cool. Start by separating the egg whites from the yolks.
2. Beat the egg whites: In a clean bowl, add a pinch of salt to the egg whites and start beating them with a mixer on high speed until you get a stiff and shiny foam. This step is essential to give the base a fluffy texture.
3. Mix the yolks: In another bowl, mix the yolks with the sugar until it dissolves completely and the mixture becomes creamy. Add the ground nuts and sifted flour, mixing well to homogenize the composition.
4. Combine the egg whites with the yolk mixture: Using a spatula, fold in the beaten egg whites with slow bottom-to-top movements to avoid losing air from the mixture.
5. Baking: Line a cake pan with baking paper and pour the mixture into it. Preheat the oven to 180°C and bake the base for 30 minutes. Test with a toothpick; if it comes out clean, the base is ready. Remove it from the oven and let it cool, ideally overnight.
Preparing the syrup
1. The syrup: In a saucepan, bring the water and sugar to a boil. Once it starts boiling, remove from heat and add the rum essence. Let it cool completely.
Preparing the cream
1. Mascarpone cream: In a bowl, combine the mascarpone with DuoCreme. Mix well until you get a homogeneous and creamy composition.
2. Preparing the cherries: Pit the sour cherries from the cherry brandy and prepare them for assembly.
Preparing the caramelized nuts
1. Caramelizing the nuts: In a pan, caramelize the sugar until it turns golden. Add the nuts and quickly stir to coat them evenly in caramel. Spread the mixture on an oiled surface and let it cool.
2. Chopping the nuts: Once cooled, chop about 150 g of the nuts using a food processor, then mix with the whipped cream.
Assembling the cake
1. Cutting the base: Cut the base into three equal parts.
2. Layering: Place the first part on a platter and soak it well with the prepared syrup. Apply some of the cream, then add the cherries. Repeat this process for the other layers, finishing with cream on the last base.
3. Frosting the cake: Use the mixture of whipped cream and chopped nuts to frost the sides of the cake.
4. Decorating: Melt the chocolate in a double boiler and pour it evenly over the cake. Decorate with sugar paste flowers for a festive and colorful look.
Useful tips
- For an even fluffier base: Let the egg whites sit at room temperature for 30 minutes before beating.

- Variations: You can also add other fruits to the cream, such as strawberries or raspberries, to diversify the flavors.
- Serving: This cake pairs perfectly with a cup of coffee or a fragrant tea. Additionally, a glass of sweet wine can perfectly complement this dessert.
