To prepare this fluffy cake, you will need: 4 eggs, 250 g of sugar, 200 ml of oil, 300 g of flour, 1 packet of baking powder, 1 packet of vanilla sugar, and a pinch of salt. If you wish, you can also add additional flavors, such as grated lemon or orange zest, to enhance the taste.
Start by preheating the oven to 180 degrees Celsius. In a large bowl, beat the eggs well with the sugar until the mixture becomes frothy and triples in volume. Gradually add the oil, continuing to mix gently. It is important that the ingredients are at room temperature to combine well and achieve a fluffy texture. In another bowl, sift the flour together with the baking powder and salt, then gradually incorporate them into the egg mixture, mixing with a spatula or wooden spoon to avoid lumps.
Once you have obtained a homogeneous mixture, you can add the vanilla sugar and, if you choose, the lemon or orange zest. Mix everything carefully, then pour the batter into a loaf pan lined with parchment paper or greased with butter and sprinkled with flour. Make sure the batter is evenly distributed in the pan for even baking.

Place in the oven (which should already be preheated to 150 degrees) and bake for 40 minutes, until a toothpick inserted in the center comes out clean. When ready, sprinkle the fluffy loaf with vanilla sugar and coconut, and after it cools, it can be sliced.
