Carefully wash the plums, ensuring they are clean and free from impurities. Drain them well to remove excess water, then carefully remove the pits, taking care not to damage the fruit's flesh. I opted for the blue plums, known for their unmistakable sweetness and aroma. Place the plums in a wide pot where you will prepare the jam, forming alternating layers of plums and sugar. Sprinkle the sugar evenly over the plums, ensuring that each layer of plums is well covered. Cover the pot with a lid or a towel and leave it at room temperature until the next day, so the fruits can release their natural juice. It is important to turn the plums a few times so that the sugar dissolves evenly and mixes well with the juice released by the plums.

The next day, place the pot on the heat, using a sheet to distribute the heat evenly. Start with a low flame, continuously stirring with a wooden spatula to prevent the sugar from sticking to the bottom of the pot. Once all the sugar has melted, increase the heat while staying close to the pot to monitor the process. Boil the jam until it thickens, testing the consistency using the drop method: put a drop on a cold plate and check if it sets.

When you think the jam is almost ready, add the fresh juice of a lemon, which will not only enhance the flavor but also help preserve the jam through acidity. Make sure to mix well to incorporate the lemon juice into the mixture. This step requires extra attention, as the jam can quickly stick to the bottom of the pot. Continue to stir constantly to achieve a homogeneous texture.

After the jam has boiled and reached the desired consistency, leave the pot covered with a clean, damp cloth to prevent a crust from forming until it cools completely. Once the jam has cooled, prepare the sterilized jars. Carefully pour the jam into the jars, leaving a little space at the top, then seal them well. Place the jars in the pantry, where they will be stored and wait to be enjoyed in the cold season, bringing with them the aroma of summer. This plum jam recipe is not only delicious but also an excellent way to preserve fruits, bringing a touch of love and warmth to every jar.
