Ingredients:
- 200 g bulgur (you can also use quinoa or couscous for a gluten-free option)
- 2 bunches of fresh parsley
- 1 large ripe tomato
- 1 small onion
- 1 cucumber
- Juice of two medium lemons
- 2 tablespoons of extra virgin olive oil
- A few sprigs of fresh mint
- Salt, to taste

Step 1: Preparing the bulgur
Start by preparing the bulgur, as it takes time to cook. In a pot, add 300 ml of water and a teaspoon of salt. Bring the water to a boil, and when it boils, add the bulgur. Let it boil for 10 minutes. It is essential for the water to be hot when adding the bulgur to achieve a perfect texture.

Step 2: Fluffing the bulgur
After 10 minutes, remove the pot from the heat and cover it with a lid. Let the bulgur fluff for 5 minutes. This step is crucial for getting fluffy and tasty bulgur. Once the time is up, drain any excess water and let the bulgur cool.

Step 3: Preparing the vegetables
Meanwhile, wash the vegetables well. Dice the tomato, cucumber, and onion into small cubes. It is important to cut them evenly to ensure a pleasant presentation and a balanced combination of flavors. The parsley and mint should also be finely chopped to release their intense aromas.

Step 4: Assembling the salad
In a large bowl, combine the cooled bulgur with the diced vegetables. Add the olive oil and lemon juice, adjusting the amount of salt to taste.
