- 200 g white beans (dried and cooked)
- 1 can of red beans (approximately 400 g)
- 1 medium green salad
- 1 red bell pepper
- 1 red onion
- 1 bunch of fresh dill
- 3-4 tablespoons of olive oil
- 2-3 tablespoons of vinegar
- Salt and pepper to taste
Preparation:
1. Preparing the beans: If you choose to use dry beans, it is essential to soak them the night before. This step not only reduces cooking time but also aids digestion. The next day, rinse the beans, place them in a pot with fresh water, and boil over medium heat. Change the water 2-3 times to eliminate any substances that may cause digestive discomfort. Boil until soft, then let cool.
2. Mixing the ingredients: Once the white beans have cooled, add the can of red beans (make sure to rinse it beforehand to remove excess salt and preservatives). This bean mix will add not only a color contrast but also a pleasant texture to the salad.
3. Chopping the vegetables: Wash the green salad and cut it into thin strips (julienne). Continue with the red bell pepper, which you can cut into slices or cubes, depending on your preference. The red onion adds a touch of sweetness, so you can also cut it julienne style to better integrate it into the salad.
4. Assembling the salad: In a large bowl, combine the white beans, red beans, chopped vegetables, and chopped fresh dill. The dill adds a fresh flavor, perfect for this salad.
5. Seasoning: Add the olive oil, vinegar, salt, and pepper to taste. Gently mix the ingredients to avoid crushing the beans. It is important not to overdo it with the salt, considering that canned beans may already be salty.
