Often overlooked, okra is extremely nutritious and certainly deserves a place of honor in our diet.

Preparation time: 30 minutes
Cooking time: 45 minutes
Total: 1 hour and 15 minutes
Servings: 4

Ingredients:

For the okra dish:
- 500 g veal (choose young meat for better taste)
- 500 g fresh okra (or a jar of good quality canned okra)
- 6 ripe tomatoes (or 3 tablespoons of concentrated tomato paste)
- 1 head of garlic
- 2 tablespoons of oil (preferably olive oil or sunflower oil)
- 1/2 tablespoon lemon juice (optional, only for fresh okra)
- Salt (to taste)
- A pinch of cumin (optional, for extra flavor)

For the yellow rice:
- 1 cup basmati rice (must be basmati for perfect texture)
- 1 and 1/4 cups water
- 3 nests of vermicelli
- 1 tablespoon oil for frying the vermicelli
- Salt (to taste)
- 1/3 teaspoon turmeric (or a little saffron dissolved in water)
- 1 cube of butter (for added creaminess)

For the ayran:
- Drinking yogurt (or thick yogurt mixed with cold water to achieve a fluid consistency)
- 5 mint leaves, chopped
- Salt (to taste)
- Ice cubes

Preparation:

1. Preparing the okra:
- If using fresh okra, start by washing them well. Cut the tops off larger okra and cut them in half; for smaller ones, just cut the tails. It is important to rinse the okra in vinegar water to remove the mucilage.
- If using canned okra, drain them well, but do not discard the juice, as it can be used in the dish.

2. Preparing the meat:
- Cut the veal into cubes and wash it well. Drain and dry it with a paper towel.
- In a non-stick pan, add 2 tablespoons of oil and brown the meat over medium-high heat, stirring continuously to avoid burning. Once the meat is lightly browned, remove it to a plate.

3. Cooking the onions and okra:
- In the same pan, add the finely chopped onion and sauté for 2 minutes, stirring constantly. The onion should absorb the flavor left by the meat.
- Add the meat back to the pan along with the okra. If using older meat, it is recommended to cook it separately for an hour before adding the okra, to tenderize it well.

4. Cooking the ingredients:
- Pour hot water over the meat and okra, just enough to cover them. Simmer over moderate heat, initially without a lid, then with the lid slightly ajar, to prevent excessive steam.
- Mix 1 tablespoon of concentrated tomato paste with a cup of water and add the mixture to the pan.

5. Preparing the tomatoes:
- Blanch the tomatoes in boiling water for 30 seconds, then peel and chop them finely. Add the tomatoes to the mixture in the pan.

6. Seasoning:
- Add the chopped garlic, a pinch of salt, and, if desired, a pinch of cumin. Cook on low heat until the sauce thickens, being careful not to let it dry out. Add hot water if necessary.

7. Preparing the yellow rice:
- In a heated pan, add 1 tablespoon of oil and fry the vermicelli, stirring continuously, until golden.
- In a steamer or a non-stick pot with a tight-fitting lid, place the washed and drained rice, add the fried vermicelli, salt, turmeric, and enough cold water to cover the rice by about 1 finger. Cover and steam for 15-20 minutes.

8. Finishing the rice:
- Once the rice is cooked, add a cube of butter and gently stir with a spatula, being careful not to stick the grains.

9. Preparing the ayran:
- In a bowl, mix the yogurt with cold water, add the chopped mint leaves and a pinch of salt. Whisk well until you achieve a fluid consistency. Serve with ice cubes for a refreshing effect.

Serving:
- Place the okra dish on plates, add the yellow rice, and enjoy with cold ayran. This combination is perfect for a summer meal or a comforting dinner.

Helpful tips:
- Choose small, fresh okra to avoid a woody texture. If unsure of the quality, opt for canned ones, but make sure they are of high quality.
- Basmati rice is ideal due to its fluffy texture. If you do not have a steamer, ensure you use a pot with a tight-fitting lid to allow proper steaming.
- Turmeric not only adds a beautiful color to the rice but also has numerous health benefits, including anti-inflammatory properties.

Frequently asked questions:
1. Can I use frozen okra?
- Yes, frozen okra can be used, but you need to thaw them before adding to the dish.

2. How can I enhance the okra dish?
- You can experiment with different spices, such as ground coriander or smoked paprika, to add an even richer flavor.

3. What other side dishes go well with this dish?
- Fresh salads with finely chopped vegetables, seasoned with olive oil and lemon juice, are excellent to accompany this dish.

This simple and tasty recipe for okra with yellow rice and ayran will surely become a favorite among family and friends. Enjoy every bite and savor the flavors!
