Mushroom Cream
To prepare a delicious mushroom cream, start by boiling 2 liters of water in a large pot. Add fresh mushrooms, which can be of any type - champignon, pleurotus, or wild mushrooms, depending on your preference. Dice the onion into small cubes and add it to the pot, along with a peeled and sliced carrot, peeled and cubed potatoes, bay leaves, salt, and pepper to taste. Let it boil over medium heat, stirring occasionally, until the mushrooms and vegetables are fully cooked and the flavors have melded together.
After the vegetables are cooked, carefully strain the water, making sure to keep a cup of the resulting liquid, as it can be used later to adjust the consistency of the cream. Separately, remove the mushrooms from the pot and let them cool slightly. Using a blender, puree the cooked mushrooms until you achieve a fine paste. This step is essential for creating a velvety and creamy texture that will make the soup truly flavorful.
Next, add the cream, crushed garlic, white wine (which will add an extra layer of flavor), and olive oil to the blender. If the paste is too thick, gradually add some of the reserved water, being careful not to thin the cream too much. It is important for it to remain consistent, yet easy to spread on a slice of toasted bread if you wish to use it as an appetizer.
Once you have achieved a smooth texture, taste the cream and season with salt and pepper to your liking. Mix well to incorporate all the ingredients. Serve the cream warm in deep bowls, with a slice of toasted bread on the side or as a garnish for a main course. Additionally, mushroom cream is delicious served cold, making it perfect for a summer meal or picnic. Garnish with fresh parsley leaves or a drizzle of olive oil for an elegant touch. This simple yet flavorful recipe will delight anyone who tastes it!
