Preparation time: 20 minutes
Cooking time: 1 hour
Total time: 1 hour 20 minutes
Number of servings: 6
Ingredients
- 1 kg smoked rib (ideal if smoked in your own smoker)
- 3 medium potatoes, peeled and diced
- 1 large onion, finely chopped
- 1 carrot, peeled and diced
- 1 red bell pepper and 1 green bell pepper (or frozen, if preferred)
- 1 celery (can also be frozen)
- 300 g soup tomatoes (preferably homemade)
- 100 g noodles (preferably homemade for an authentic taste)
- 1 liter bors (or to taste)
- Salt to taste
- Fresh dill and parsley, finely chopped (to serve)
Preparing the soup
1. Preparing the ribs: Start by portioning the smoked ribs into suitable pieces. Rinse the meat well under cold running water to remove any impurities. Then place it in a large pot of cold water and bring to the boil.
2. Removing the foam: Once the water starts to boil, a foam will form on the surface. Use a skimmer to remove this scum, making sure the soup stays clear.
3. Simmer: Once you've skim off the foam, simmer the soup, covering the pot. This will allow the flavors to develop. Simmer for about 30 minutes.
4. Adding the vegetables: Once the meat is half cooked, add the celery, onion, carrot, bell pepper and potatoes. Let everything simmer together for about 20 minutes, or until the vegetables are tender.
5. Adding the tomatoes: Add the tomatoes to the stock and simmer for another 5-10 minutes. The tomatoes will add a nice acidity and vibrant color to the broth.
6. Bors: Meanwhile, in a separate saucepan, bring the bors to the boil. Once boiling, pour it slowly into the broth. Adjust salt to taste.
7. Noodles: Add the noodles to the broth and simmer for another 5 minutes. They will absorb the rich flavors of the soup and add a nice texture.
8. Finishing: Before serving, add the chopped dill and finely chopped parsley to add freshness to the soup.
Serving
Smoked rib soup is best served hot, ideal with chilli peppers for those who prefer a spicy kick. It can be served with a slice of fresh bread or a slice of breadcrumbs, which will perfectly complement the intense taste of the soup.
Suggested Combinations
This soup harmonizes wonderfully with coleslaw or assorted pickles, bringing a crisp and refreshing contrast. If you want to enjoy it with a drink, a glass of dry white wine is the perfect choice.
Tips and Variations
- Trick for an even richer flavor: Add a tablespoon of tomato paste while boiling the vegetables to intensify the flavors.
- Variations: Experiment with other vegetables such as zucchini or green beans to add different textures. You can also use pork or beef, depending on preference.
