Ingredients:
- 150 g biscuits (preferably unfilled, such as digestive biscuits or butter biscuits)
- 100 g unsalted butter, melted
- 500 g melon, seeded and diced
- 300 ml heavy cream (minimum 30% fat)
- 200 g cream cheese (at room temperature)
- 100 g powdered sugar
- 1 teaspoon vanilla extract
- 1 packet of gelatin (10 g)
- 50 ml cold water
Preparing the cake:
1. Start by preparing the pan. Use a loaf pan, but you can also use other rectangular shapes, making sure to line the inside with plastic wrap to facilitate cake removal later.
2. Crush the biscuits into small pieces using a food processor or by placing them in a plastic bag and rolling them with a rolling pin. It is important that the biscuits are well crushed but not turned into powder.
3. Mix the crushed biscuits with the melted butter until you achieve a homogeneous mixture. This will form the base of the cake. Place the mixture in the prepared pan and press down well with a spatula to form an even crust.
4. Now, move on to the melon filling. In a large bowl, combine the diced melon with the cream cheese, heavy cream, powdered sugar, and vanilla extract. Use an electric mixer to blend these ingredients at medium speed until you achieve a creamy and homogeneous mixture.
5. In a small bowl, hydrate the gelatin in cold water for 5-10 minutes. Then, gently heat the gelatin in a double boiler or microwave to dissolve completely, being careful not to boil it.
6. Add the dissolved gelatin to the melon mixture, stirring well to ensure there are no lumps.
7. Pour the melon filling over the crust and level it with a spatula. Cover the pan with plastic wrap and place the cake in the refrigerator for at least 2 hours, or until it sets.
8. Once chilled, remove the cake from the pan using the plastic wrap and cut it into slices.
Serving suggestions:
For an extra flavor boost, you can decorate the cake with thin slices of melon or fresh mint. A delicious option is to serve it with a berry sauce or melted chocolate on top.
