To prepare a delicious recipe of liver with olives, the first step is to ensure that we have all the necessary ingredients ready at hand. You will need a medium onion, two to three cloves of garlic, a red or yellow bell pepper, chicken liver (about 500 grams), unsalted olives, sour cream, starch, olive oil, sweet paprika, salt, pepper, and thyme.

We start by cleaning the onion and garlic. The onion will be finely chopped, and the garlic will be crushed or sliced thinly, depending on preferences. In a large frying pan, heat a little olive oil and add the onion and garlic. Sauté over medium heat, stirring constantly, until they become translucent and their aromas are released. This process takes about 5-7 minutes. Then, add the diced or sliced bell pepper, continuing to sauté until it softens, which should take another 5 minutes.

Once the vegetables are ready, sprinkle the sweet paprika, mix well to combine the flavors, and then add the liver. It is important not to leave the liver on the heat for too long, so make sure to cook it on low heat until it slightly changes color, becoming whitish. This is the moment to add water, just enough to cover the liver, and cover the pan. Let it simmer on low heat, being careful not to let too much liquid evaporate, until the liver is fully cooked, which takes about 15-20 minutes.

While the liver is cooking, prepare the olives. They should be unsalted to avoid a too salty taste. It is recommended to soak them in cold water overnight, and the next day to boil them briefly in fresh water, then drain them. Add the olives to the pan towards the end of the liver cooking process, to combine the flavors.

Once the liver is cooked, add the starch dissolved in sour cream, mixing well to avoid lumps. Then add the finely chopped parsley, and season with salt and pepper to taste. Sprinkle thyme to enhance the aroma, then let it simmer for a few moments until the sauce thickens and becomes creamy.

Serve the dish hot, alongside a side of mashed potatoes or a fresh salad, to complete the meal. This recipe is not only tasty but also full of nutrients, perfect for a family dinner or a special occasion.
