Cottage cheese dumplings with tomato sauce
Dumplings are a delicious dish, full of flavor, that can be served as an appetizer or main course. We start by preparing the dumpling dough. In a large bowl, we add well-kneaded cottage cheese, fresh eggs, finely grated cheese, salt, pepper, and dried basil, which will bring a subtle aroma to the dish. We use our hands to mix all the ingredients, obtaining a homogeneous composition. After mixing well, we gradually incorporate the flour until we obtain a slightly sticky dough that can be shaped.
In a large pot, we bring water to a boil, adding a teaspoon of salt to enhance the flavor of the dumplings. When the water starts to boil vigorously, we reduce the heat to medium. We form the dumplings from the obtained dough, making sure they are the size of a walnut, so they cook evenly. We carefully transfer them into the boiling water and let them boil for about 10 minutes, or until they rise to the surface, indicating they are ready. We use a slotted spoon to remove them from the water, being careful not to break them, and place them on a platter.
Meanwhile, we prepare the tomato sauce, which will perfectly complement the taste of the dumplings. In a frying pan, we add the oil, tomato juice, and a little water to thin the sauce. We season with salt, pepper, dried basil, and finely chopped fresh dill, which will add a fresh note. We mix all the ingredients well and let the sauce simmer over medium heat, stirring occasionally, until it reduces and becomes thicker. This process usually takes about 10 minutes.
Once the sauce is ready and the dumplings have been boiled, we carefully transfer them to the frying pan, covering them with the aromatic sauce. We let them warm together for a few minutes so that the flavors blend perfectly. They are served hot, and each portion can be garnished with a sprinkle of fresh dill or grated Parmesan, according to preference.
