To prepare a delicious and healthy quinoa meatball recipe, it's important to ensure you have all the necessary ingredients and to follow the steps carefully. Start by peeling the onion, cutting it in half. The bell pepper should also be seeded and cut into pieces. These two vegetables will be roasted together in the oven. Preheat the oven to 160 degrees Celsius and place the onion and bell pepper on a tray, allowing them to roast for about 30 minutes. When they are ready, take them out of the oven and let them cool slightly, then peel the skin off the bell pepper, removing the charred skin.

Once the vegetables have cooled, place them in a strainer to drain off any excess water. Meanwhile, rinse the quinoa under a cold water stream to remove the bitterness. Then, put the quinoa in a cup of water, bringing it to a boil. Once the water starts boiling, reduce the heat and let the quinoa simmer until all the water is absorbed. This process will take about 15 minutes. After the quinoa is ready, let it cool.

In the meantime, wash the spinach well and place it on a paper towel to drain. The feta cheese will be crumbled into small pieces so that it integrates perfectly into the mixture. Once all the ingredients are prepared, finely chop the roasted onion and bell pepper using a food processor to save time and effort.

In a large bowl, combine the cooled quinoa with the chopped vegetables, add the crumbled feta cheese, and one beaten egg. Mix all the ingredients well until homogeneous, obtaining a compact mixture. Prepare a tray by greasing it with olive oil to prevent the meatballs from sticking. With oiled hands, form small balls from the obtained mixture, keeping in mind that this amount should yield about 15 meatballs.

Place the meatballs on the tray, taking care to leave a little space between them. Put the tray in the preheated oven and let them brown for about 30 minutes, or until they become golden and crispy on the outside. These meatballs are not only a great snack but also a healthy dish that you can serve alongside a fresh salad or yogurt sauces.
