Breaded Zucchini

To prepare a delicious recipe for breaded zucchini, we start by choosing young and fresh zucchinis that have a firm texture and a sweet taste. We take the zucchini, peel it with a sharp knife, removing the outer skin. Then, we cut the zucchini into thicker slices, about 1 cm, to ensure they fry evenly and become crispy on the outside while retaining their juiciness on the inside.

After cutting the zucchinis, we lightly salt them to enhance their flavor and help them release some water. We let the zucchini slices rest for about 15 minutes, during which time the salt will act. Once they have rested, we wipe the slices with a paper towel to remove excess water, which will help achieve a perfect crust.

The next step is to prepare a mixture of flour and egg. In a bowl, we put about a cup of flour, and in another bowl, we beat a few eggs, adding a little salt for taste. The zucchini slices are first dipped in flour, ensuring they are evenly coated, then submerged in the beaten egg, so a delicious crust forms during frying.

In a deep pan, we heat the oil over medium heat, making sure it is hot enough to fry the zucchinis. Once the oil reaches the optimal temperature, we carefully place the zucchini slices in the pan. They fry on one side until they become golden and crispy, for about 3-4 minutes, then are flipped with a spatula to fry on the other side.

After they reach a pleasant golden hue, we remove the slices from the pan and place them on a platter covered with a paper towel, which will absorb excess oil. The breaded zucchini slices are served hot, sprinkled with a little salt, and are delicious alongside fresh garlic sauce or juicy tomatoes. If you have fresh or toasted bread on hand, feel free to add it to the table to create an even tastier dish.
