Pasta with Mushrooms

 Ingredients: 300 g fresh pasta (i.e., the kind that is kept in the refrigerator at the grocery store, not on the shelf) 2 large porcini mushrooms 1 clove of garlic 1 tablespoon of sour cream (I didn't have any and replaced it with Philadelphia cream) parmesan (about 2 tablespoons) olive oil 1 clove of garlic salt, pepper to taste fresh parsley

To prepare a delicious mushroom pasta recipe, we will start by carefully cleaning the mushrooms, using a clean cloth to remove any dirt residue. Once cleaned, we chop them into suitable pieces so that they cook evenly. In a large skillet, we add a little olive oil and a whole clove of garlic, which we let infuse in the oil to give it an aromatic flavor.

When the garlic starts to release its aroma, we add the chopped mushrooms and parsley stems, allowing everything to sauté on low heat. We cover the skillet with a lid to retain moisture and allow the mushrooms to release their juice, transforming into a savory mixture. We let it simmer on low heat for about ten minutes, during which we can prepare the pot of water for the pasta.

I chose a thicker type of pasta, a kind of noodles, which pairs perfectly with the creamy sauce we are about to prepare. It is important to boil them according to the instructions on the package, being careful not to leave them cooking too long to stay al dente.

Once the mushrooms have reached the desired consistency, we add a tablespoon of sour cream, stirring gently to turn the sauce into a creamy and flavorful one. At this point, we adjust the taste with salt and pepper, and the garlic and parsley stems are removed from the skillet, as they have fulfilled their role.

When the pasta is cooked, we drain it and add it directly to the skillet with the mushrooms. We carefully mix to ensure that each piece of pasta is coated in that delicious sauce. Finally, we add grated Parmesan cheese, which will add an extra flavor, and freshly chopped parsley, which will bring a touch of freshness and color to our dish.
