In a large bowl, we start by adding the sifted flour, which will be the base of our delicious recipe. Then, we add the two tablespoons of sugar, which will provide sweetness and a pleasant taste to the dough. We sprinkle a pinch of salt, essential for balancing the flavors, and the grated lemon zest, which will add a fresh and citrusy note. We continue with a whole egg and the yolk of the other egg, ingredients that will contribute to the velvety structure of the dough, and the butter, which will give a tender texture.

We mix all the ingredients well with our hands until we obtain a homogeneous composition that has a pleasant consistency. This step is crucial, as the correct mixing will influence the final texture of the crescents. After obtaining a uniform composition, we add the yeast dissolved in the warm milk, which will help the dough rise and become fluffy. We knead well, patiently, until the dough becomes elastic and easy to work with, an important aspect for being able to roll it out later.

Meanwhile, we take care of the rahat. We cut it into thin slices, ready to be integrated into our crescents. Without letting the dough rise, we break off a piece of it and roll it out on a surface sprinkled with a little flour. We cut it into eight triangles, placing a slice of rahat at each end. We carefully roll each triangle, thus forming the delicious crescents that will be filled with that delicious rahat.

After forming all the crescents, we prepare to give them a final touch. In a bowl, we beat the remaining egg white, and on a plate, we put the sugar. We brush each crescent with egg white, making sure they are well coated, and then we roll them in sugar so that they obtain a sweet and attractive crust. We carefully arrange the crescents in the prepared tray, making sure to leave a little space between them to bake evenly.

Once the tray is full, we place the crescents in the preheated oven, where they will bake until golden and fragrant, filling the entire room with an inviting aroma. When they are ready, we take them out of the oven, letting them cool slightly, and then they are ready to enjoy. Bon appétit!
