Leek soup
Clean the leek by removing the wilted leaves and washing it very well, ensuring that all impurities and sand are removed. It is recommended to separate the green leaves and wash them separately to ensure that no dirt remains. After washing, cut the leek into thin slices, about 1-2 cm, for even cooking.
In a large pot, pour a few tablespoons of olive oil and place it over medium heat. When the oil is hot, add the chopped leek and sauté it for 5-7 minutes, until it becomes slightly transparent and starts to soften. It is important to stir constantly to avoid burning. At the end of this process, add salt and pepper to taste, and if desired, you can also add a pinch of sweet paprika to enhance the flavor.
After the leek is cooked, you can continue with other ingredients. For example, you can add a few peeled and diced potatoes to create a hearty dish. After adding the potatoes, pour enough water over them to cover, then let them simmer on low heat, covering the pot with a lid. This way, the flavors will concentrate, and the potatoes will cook evenly.
After about 20 minutes, check if the potatoes are well cooked, and if necessary, add additional spices. Also, for a richer taste, you can add a few sprigs of fresh dill or chopped parsley, which will give a special aroma to the dish. If you want a heartier version, you can also add a few slices of sausage or bacon, which will brown nicely and enrich the dish with flavor.
When everything is ready, serve the dish hot, garnishing the plate with a little fresh dill and, if you like, even a spoonful of sour cream on top.
