To prepare this delicious roll, start by sifting the flour into a large bowl to eliminate any lumps and achieve a fine texture. This is an essential step, as well-sifted flour will contribute to an even consistency of the dough. After sifting the flour, add the egg yolks, sour cream, and salt. Using a mixer or a spatula, carefully mix these ingredients until you obtain a homogeneous composition.

In another bowl, beat the egg whites until you achieve a stiff foam, which will give the roll an airy structure. It is important to use a clean and dry bowl to get perfectly beaten egg whites. Once the egg whites have reached the desired consistency, incorporate them into the flour, egg yolks, and sour cream mixture, gently folding from the bottom up to avoid losing air from the egg whites.

Prepare a large baking tray by lining it with parchment paper, then carefully pour in the obtained dough mixture. Tilt the tray in all directions to ensure an even distribution of the dough across the surface. Place the tray in the preheated oven at 170-175 degrees Celsius and bake for about 15-20 minutes. It is essential to check the dough with a toothpick test: it should come out clean, and the dough should be lightly browned at the edges.

As soon as the base is baked, turn it over onto a dry towel and carefully remove the parchment paper. On the warm base, evenly sprinkle the grated cheese, diced ham or salami, finely chopped bell pepper, chopped fresh parsley, freshly ground pepper, mozzarella, and pieces of butter. These ingredients will add a rich taste and delicious aroma to the roll.

Now, carefully roll the dough considering that it is elastic and can break easily, but don’t worry, the roll will look wonderful even with small imperfections. Transfer the roll back to the lined baking tray and put it back in the oven for another 10 minutes at the same temperature to blend all the flavors and lightly brown it.

After taking the roll out of the oven, let it cool on a rack. When completely cooled, slice it and serve it with pleasure, either as an appetizer or alongside a fresh vegetable salad.
