Christmas Appetizer (pineapple)
Take the cheese at room temperature, which will be the base ingredient of our delicious appetizer, and mix it with the sour cream using a mixer. It is essential that the mixture is homogeneous, ensuring that the cheese integrates perfectly into the sour cream. Once we have obtained a creamy composition, we add all the other ingredients, which may include various herbs, spices, or even pieces of vegetables, depending on personal preferences. We mix again with the mixer for a few seconds, just enough to combine the ingredients well without turning them into a paste.
Once we are done mixing, we remove the composition from the bowl in which it was made and place it on a plate or platter on which we will serve the appetizer. We shape the mixture into a teardrop shape, an aspect that will add elegance to the dish. We cover it with cling film and put it in the fridge to firm up, preferably until the next day, to allow the flavors to develop.
On the day of serving the appetizer, we take care of the pecans, which we prepare and set aside until it’s time to decorate. About two hours before the guests arrive, it’s time to dedicate ourselves to decorating the appetizer. We take the cheese out of the fridge about thirty minutes before we start decorating, so that it reaches room temperature. This step is crucial as it will facilitate the sticking of the nuts to the surface of the cheese.
After removing the cling film, we start attaching the pecans, beginning at the base of the pineapple shape. The first layer of nuts is placed side by side, and for the second layer, we place them very gently overlapping the ones below, creating a three-dimensional appearance. We continue to raise the nuts as the decoration progresses, so that in the end, they create a pleasing visual effect. At the top of the pineapple, we insert the two pine sprigs, thus completing the elegant look of the appetizer.
It is important to mention that with the cheese cream we can experiment with various combinations. For example, we can add pineapple or other fruits, depending on the personal tastes of the guests. This recipe is versatile and can be adapted to satisfy different culinary preferences. Ingredients: 225 g cream cheese, 3-4 tablespoons of thick sour cream, orange zest (I used lemon), 3 tablespoons of dried cranberries, 2-3 tablespoons of crushed nuts (I used pecans), salt and pepper to taste, cayenne pepper powder, 75-100 pieces of pecan nuts (I only had 60). The amount of nuts depends on their size, 2 bunches of pine (optional).
