Step-by-step instructions:

1. Preparing the plums: Start by washing the plums well under a stream of cold water to remove any impurities. Then, remove the stems and, if preferred, cut the plums in half or leave them whole for a more rustic appearance. If you choose to cut them, make sure to remove the pits, as they are not edible.

2. Preparing the syrup: In a large pot, add the 800 ml of water, 250 g of sugar, the pinch of cinnamon, and the cloves. These spices not only add flavor but also a delightful aroma to the kitchen. Mix the ingredients and place the pot over medium heat. Wait until the sugar completely dissolves, then bring the mixture to a boil.

3. Boiling the plums: Once the syrup has started to boil, add the plums. Let them boil in the syrup for about 20 minutes, stirring gently from time to time. The plums will become tender, and the syrup will thicken slightly. It is important not to boil them too much to avoid turning them into puree.

4. Adding lemon juice: After 20 minutes, add the lemon juice to the pot. This will add a note of freshness and balance the sweetness of the compote. Let everything boil for another 5-10 minutes.
