Lamb Scraps
Drobul is a traditional dish that can be enjoyed during the Easter holidays, but also on other festive occasions. This version that I propose today combines all the classic ingredients with some new flavors, transforming the drob into a special delicacy. Using poultry liver, fresh mushrooms, and plenty of greens, the recipe becomes a remarkable culinary feast.
To begin, prepare the necessary ingredients: 500 g of lamb or pork meat, 300 g of poultry liver, 200 g of mushrooms, 1 bunch of green onions, 1 bunch of parsley, 1 bunch of dill, 4-5 eggs, 200 g of sour cream, salt and pepper to taste, and a sheet of pastry to wrap the drob.
The first step is to finely chop the lamb or pork meat, poultry liver, and mushrooms. It is recommended to use a sharp knife to achieve a uniform consistency. After you finish chopping, sauté the mushrooms in a pan with a little oil until all the water evaporates. Then, add the chopped green onions, parsley, and dill, leaving the mixture on the heat for a few minutes. This step will bring an intense flavor to the dish.
In a large bowl, mix the meat, liver, and mushroom mixture with the greens. Incorporate the beaten eggs, sour cream, salt, and pepper to taste. It is essential to mix all the ingredients well to obtain a homogeneous compound, which will give the desired texture to the drob.
After you have obtained the composition, prepare the pastry sheet. Place it in a baking tray, allowing the edges to hang slightly over the edge of the tray. Pour the drob mixture into the center of the sheet, leveling it with a spatula. Then, fold the edges of the pastry sheet over the filling so that you completely cover it.
Preheat the oven to 180 degrees Celsius and bake the drob for 45-50 minutes, or until it becomes golden and crispy on the outside. Once ready, let it cool slightly before slicing. This drob with poultry liver and mushrooms will prove to be an excellent choice for any festive meal, offering a rich taste and pleasant texture, while the combination of greens will add a touch of freshness. Enjoy it alongside a fresh vegetable salad or a side of pickles, and savor an unforgettable culinary experience!
