Rahat Lokum, also known as Turkish delight, is a classic dessert with a soft and chewy texture that delights the taste buds with its diverse flavors. This simple recipe will allow you to prepare delicious rahat at home, perfect to enjoy alongside a cup of tea or to give as a sweet gift to loved ones.
Ingredients:
- 400 g sugar
- 120 g glucose syrup
- 240 ml water
- 120 g cornstarch
- 1 teaspoon lemon juice
- 1 teaspoon rose or vanilla essence
- 100 g nuts, hazelnuts, or pistachios (optional, for added texture)
- Powdered sugar and cornstarch for dusting
Step by step:
1. Start by combining the sugar, glucose syrup, and water in a large pot. Mix the ingredients well and place the pot over low heat. It is important to stir occasionally to prevent the sugar from caramelizing. Wait until the sugar has completely melted, resulting in a homogeneous syrup.
2. In another bowl, mix the cornstarch with 240 ml of cold water, stirring until completely dissolved. This step is crucial, as the cornstarch will give the rahat its characteristic texture.
3. Once the sugar syrup starts to boil, add the cornstarch mixture and continue stirring constantly with a wooden spatula. Cook the mixture over medium heat for about 10-15 minutes until the composition becomes thick and elastic. It is essential not to stop stirring; otherwise, lumps may form.
4. After the mixture reaches the desired consistency, add the lemon juice and rose essence (or vanilla) to give it a pleasant aroma. If you wish to add nuts or hazelnuts, now is the time to incorporate them.
5. Pour the obtained composition into a square tray lined with baking paper and smooth the surface. Cover with plastic wrap and let it cool at room temperature for at least 4 hours or ideally overnight.
6. Once the rahat has set, remove it from the tray and cut it into cubes of the desired size. Dust each cube with powdered sugar and cornstarch to prevent sticking.
Serving suggestions:
Rahat Lokum is delicious served alongside a cup of Turkish tea or coffee. You can arrange it on an elegant platter, decorating it with rose petals or mint leaves for an attractive visual presentation. You can also experiment with different flavors by adding lemon, orange zest, or even cocoa to create interesting variations.
Variations:
- Instead of rose essence, you can use fruit essences (cherry, blackberry, etc.) to create rahat with varied flavors.
- Add natural food colorings to achieve an attractive rahat with vibrant colors.
Useful tips:
- Make sure to stir constantly to prevent the mixture from sticking to the bottom of the pot.
- Use a wooden spatula, which is more effective in mixing than a metal one.
- If you want a less sweet rahat, you can reduce the sugar amount by 50 g.

Ingredients: 1 lb = 454 g glucose (approx. 230 g corn syrup), 5 1/2 lb granulated sugar = 2500 g (1250 g), 3/4 lb starch = 340 g (170 g), juice from one lemon (1/2 lemon), 1 teaspoon powdered mastic (I didn't have), 3 tablespoons rose water or orange blossom water (1 1/2 tablespoons rose water), 3-4 oz. = approx. 100 g ground almonds or pistachios (I didn't add), food coloring, to taste, powdered sugar and starch for dusting, 2 cups water = 480 ml (240 ml) - for the sugar and glucose mixture, 6 cups water = 1440 ml (720 ml) - for the starch and cream of tartar mixture. The amounts in parentheses are for half the composition. Additionally, I added 1 teaspoon of cream of tartar.
