For the BBQ sauce:
- 2 tablespoons of oil
- 1 small onion, finely chopped
- 2 cloves of garlic, crushed
- 1/2 teaspoon of cumin
- 1/4 teaspoon of cayenne
- 170 g of tomato paste
- 800 g of whole tomatoes, blended
- 340 g of applesauce (prepared earlier)
- 120 ml of honey apple cider vinegar
- 2 tablespoons of brown sugar
- 2 tablespoons of salt
- 1/2 teaspoon of black pepper, ground
- 500 ml of apple juice
For the pork ribs:
- 3.5 kg of pork ribs (or 2 large whole pieces)
- 55 g of brown sugar
- 30 g of paprika
- 4 1/2 teaspoons of salt
- 1 tablespoon of cocoa
- 1 teaspoon of cayenne
- 1 teaspoon of cumin
Preparation
Step 1: Preparing the applesauce
1. Start by placing all the ingredients for the applesauce in a double-bottomed pot. Cover with a lid and bring the mixture to a boil.
2. Once it starts boiling, reduce the heat to low and let it simmer for 20-30 minutes, stirring occasionally.
3. Remove the lemon strips and cinnamon stick, then puree the mixture using a food processor. You can serve the applesauce as is, alongside ice cream or yogurt for a simple and delicious dessert.
Step 2: BBQ sauce
