Sacher Cake - A Delight with a Charming Tradition

The Sacher cake is a classic recipe, beloved by dessert enthusiasts around the world. This decadent cake combines a chocolate base with a succulent apricot jam filling, all covered with a rich chocolate glaze. Although the original recipe has a fascinating story and a special place in the hearts of dessert lovers, today I will present a simplified yet equally delicious version that can be easily made at home.

Total time: 1 hour 30 minutes (plus 3-4 days for the perfect flavor)
Servings: 12

Ingredients:

For the base:
- 200 g butter (at room temperature, not from the fridge)
- 200 g powdered sugar
- 2 packets of vanilla sugar
- 200 g chocolate (minimum 40% cocoa)
- 8 eggs (separate egg whites from yolks)
- 200 g flour
- 3 tablespoons cocoa powder
- a pinch of salt
- 1 teaspoon baking powder

For the filling and decoration:
- Orange liqueur (optional, for a more intense flavor)
- Apricot jam (about 200 g)
- 200 g chocolate (minimum 40% cocoa) for glazing
- 100 g coconut butter (or regular butter)

Preparation:

1. Preparing the ingredients: Make sure you have all the ingredients at room temperature, especially the butter. This is essential for achieving a fluffy and airy foam. Sifting the flour and cocoa powder before use will help eliminate any lumps and ensure a fine texture for the base.

2. Butter foam: In a large bowl, beat the butter together with the powdered sugar and vanilla sugar until you obtain a fluffy and light-colored mixture. This process is crucial as the incorporated air will make the cake lighter.

3. Adding the yolks: Incorporate the egg yolks one by one, ensuring that each is fully integrated before adding the next. This will contribute to a uniform texture of the base.

4. Melting the chocolate: Place the chocolate in a heat-resistant bowl and melt it in a double boiler, stirring constantly. Once melted, let the chocolate cool slightly, then incorporate it into the butter mixture.

5. Mixing dry ingredients: In another bowl, mix the flour, cocoa powder, baking powder, and salt. This mix will add consistency and flavor to the cake.

6. Integrating ingredients: Gradually add the dry ingredient mix to the wet mixture, alternating with the beaten egg whites (which should be beaten until very stiff). Start by adding a portion of the egg whites, followed by flour, then another portion of egg whites, and the remaining flour. This step must be done carefully, using a spatula to avoid losing air from the egg whites.

7. Baking: Preheat the oven to 170 degrees Celsius. Pour the mixture into the cake pan lined with parchment paper and bake for about 50-60 minutes. Check if it’s done using a toothpick; if it comes out clean, the cake is perfectly baked.

8. Cooling: Let the cake cool in the pan for an hour, then carefully remove it and let it cool completely on a cooling rack.

9. Filling with jam: Once the cake is completely cooled, cut it in half horizontally. Spread a generous layer of apricot jam between the two halves. If you want a more intense flavor, drizzle with a little orange liqueur.

10. Glazing: Melt the chocolate and coconut butter in a double boiler, stirring until you achieve a homogeneous mixture. Let it cool slightly, then cover the cake with this mixture, ensuring to cover the edges as well.

11. Resting: This cake becomes truly delicious after a few days. Let it rest in the refrigerator for 3-4 days to allow the flavors to develop.

Useful tips:
- Use high-quality chocolate for a rich and refined taste.
- You can substitute apricot jam with other types of jam or preserves, such as raspberry or strawberry, for a different note.
- If you want an alcohol-free version, simply omit the orange liqueur.

Delicious combinations: The Sacher cake pairs wonderfully with a cup of freshly brewed coffee or a fragrant tea. Additionally, a scoop of vanilla ice cream or a light whipped cream can perfectly complement the tasting experience.

Calories and nutritional benefits: A serving of Sacher cake (approximately 120g) contains about 400-450 calories, depending on the ingredients used. It provides antioxidants from chocolate, healthy fats from butter, and a dose of energy from sugar. However, it is recommended to be consumed in moderation, considering its high caloric content.

The Sacher cake is more than just a dessert; it is a culinary experience that brings joy and satisfaction. Prepare it with love and savor each slice as a small reward!
