Step-by-step preparation:
1. Preparing the dough
In a medium bowl, crack the egg and add the 3 tablespoons of sugar, a pinch of salt, and the lemon zest. Use a whisk or spatula to mix the ingredients until you achieve a homogeneous and fluffy mixture.
Add the sour cream and oil, continuing to mix well. At this point, make sure all ingredients are well integrated.
Start adding the flour mixed with baking powder, one tablespoon at a time, mixing constantly. You will obtain an elastic dough that can be rolled out. If it's too sticky, you can add a little more flour. Cover the dough with a clean towel and set it aside.
2. Preparing the filling

Add the semolina to the plum puree and mix well, so that it absorbs the juice released by the fruits.
3. Assembling the strudel
Divide the dough into two equal portions. On a floured surface, roll out the first portion of dough into a thin sheet, about 0.5 cm thick. Be careful not to tear it!
Place the plum filling in the center of the dough sheet, leaving the edges free. Carefully roll the dough from one end to the other, forming a log. Seal the edges by pinching them with your fingers.
Repeat the process with the second portion of dough and the remaining filling.
4. Baking
Preheat the oven to 180°C (moderate heat). Place the strudel logs on a baking sheet lined with parchment paper. You can brush them with a beaten egg for a beautiful golden color.
