Dietetic Zucchini Meatballs
To prepare these delicious zucchini fritters, we will start by peeling the zucchinis. Make sure to choose fresh and meaty zucchinis, as they will give a pleasant texture to the fritters. After peeling, cut them into smaller pieces and boil them in a pot of water. Let them boil for about 10-15 minutes until they become soft. Once boiled, remove them from the water and let them cool slightly, then squeeze out the excess water. This step is essential because a watery zucchini will make the fritters too wet and they won't hold together well.
Once the zucchinis are ready, we will put them in the food processor and chop them until we get a fine paste. While the processor works, peel a potato and grate it on the small grater. The potato will add volume and a bit of starch, which will help bind the ingredients. The garlic, with its intense and unmistakable aroma, should also be crushed with a garlic press or, if you prefer, finely chopped. In a large bowl, combine the chopped zucchinis, grated potato, crushed garlic, and chopped greens. Add an egg, which will act as a binder, and season generously with salt and pepper. Mix the ingredients well until the composition is homogeneous. Now we are ready to shape the fritters. To do this, prepare a tray lined with baking paper. With wet hands, form equal-sized fritters, being careful not to make them too large so they cook evenly.
Place the fritters on the tray and put them in the preheated oven at 180 degrees Celsius. Let them bake for 25-30 minutes or until they become golden and crispy on the outside. The aroma that will fill the kitchen during baking will be irresistible! When they are ready, you can serve them with a fresh tomato sauce, a green salad, or even as an appetizer.
